إليك وصفة جديدة تم إعدادها بالشراكة مع Visit Czech Republic . هذه المرة صنعنا بريوش عيد الميلاد المضفر. بنكهة لذيذة بالليمون واللوز والزبيب ، وهي مكونة من ثلاث طبقات لتكديسها. لا داعي للذعر ، يتم شرح كل شيء خطوة بخطوة كالمعتاد وحتى على الفيديو!
Recette pour BRIOCHE TRESSÉE DE NOËL TCHÈQUE :
500 جرام طحين
1 رشة ملح كبيرة
90 جرام سكر بودرة
6 غ من خميرة الخبز المجففة (أو 20 غ من الخميرة الطازجة)
225 مل حليب
نكهة ليمون عضوي
5 صفار بيض
150 جرام زبدة غير مملحة في درجة حرارة الغرفة
100 جرام لوز أبيض
100 جرام زبيب
للتذهيب:
1 بيضة مخفوقة
لوز مقشر
Instructions :
ضع الدقيق والملح والخميرة (التي يجب ألا تلمس الملح) والسكر البودرة والحليب في وعاء الروبوت الخاص بك.
قشر الليمون العضوي.
يُصفار البيض ، ثم يُعجن العجينة لمدة 7 دقائق تقريبًا للحصول على شيء متجانس.
أضف الزبدة في درجة حرارة الغرفة.
اعجن مرة أخرى حتى تمتزج بالكامل.
أضف الزبيب واللوز.
اخلط جيدا.
العجين منتهي.
اتركيه لينمو لمدة ساعة ونصف إلى ساعتين في مكان دافئ. في نهاية هذا الوقت ، أزل الغاز من العجين عن طريق الضغط عليه ، ثم ضع فيلمًا مطاطيًا على التلامس. اتركه ليبرد طوال الليل أو 3-4 ساعات على الأقل.
في اليوم التالي ، أخرجي العجينة من الثلاجة قبل 2-3 ساعات من تحضيرها. قسّمها إلى 8 كرات من نفس الوزن (حوالي 155 جم).

اتركيه لينضج لمدة ساعة قبل دهنه بالبيض المخفوق.
يرش اللوز المقطع.
ثم يُطهى لمدة 10 دقائق عند 180 درجة مئوية على حرارة دوارة ، ثم ينخفض إلى 155 درجة مئوية لمدة 45 دقيقة إضافية.
قم بإزالة المسامير عندما تبرد البريوش واستمتع بها !!
