معجون كاكاو حلو يسهل استخدامه كقاعدة للفطائر. ستتحمل الطهي جيدًا، وتثبت في دائرة للخبز دون أن تنهار. إنه مثالي في تورتة الشوكولاتة أو لإضفاء لمسة أو لون على تورتة كلاسيكية!
بالنسبة للمعجنات الحلوة :
225 جرام طحين T55
70 جرام سكر بودرة
25 غ من مسحوق الكاكاو غير المحلى
150 جرام زبدة نصف مملحة
50 جرام بيضة
ضع الطحين والسكر البودرة ومسحوق الكاكاو في وعاء محضر الطعام أو في وعاء.
تُضاف الزبدة الباردة المقطعة إلى قطع.
تُخلط بالورقة (إناء على شكل حرف K) أو بأطراف الأصابع حتى تصبح بودرة.
يشبه إلى حد ما قوام جبن البارميزان المبشور.
تُسكب 50 جرام من البيض (توزن بدون القشرة). وللقيام بذلك، اكسري بيضة في وعاء واخفقيها بالشوكة ثم اسكبي الـ 50 غرام المطلوبة.
اخلط مرة أخرى حتى تتماسك العجينة. لا تصر!
شكّل العجينة على شكل كرة ثم افردها على شكل قرص سميك يسهل فرده لاحقاً. يُلف في غلاف بلاستيكي ويُبرد لمدة ساعة واحدة على الأقل.
استخدمه للفطائر!

Une pâte sucrée au cacao toute simple à utiliser pour des fonds de tartes. Elle résistera très bien à la cuisson, tenant dans un cercle pour une cuisson à blanc, sans s'effondrer. Elle sera parfaite dans une tarte au chocolat, ou pour donner un petit "twist" ou de la couleur à une tarte plus classique !
Placez la farine, le sucre glace et le cacao en poudre dans la cuve de votre robot, ou dans un récipient.
Ajoutez le beurre froid coupé en morceaux.
Mélangez avec le feuille (ustensile en forme de K) ou du bout des doigts jusqu’à avoir une poudre.
Cela ressemble un peu à la consistance de parmesan râpé.
Versez les 50g d’œuf (pesez sans coquille). Pour cela, cassez un œuf dans un bol, battez à la fourchette, puis versez-en les 50g nécessaires.
Mélangez de nouveau jusqu’à ce que la pâte s’agglomère. N’insistez surtout pas !
Mettez la pâte en boule, puis aplatissez-la pour en faire un disque épais qui sera plus facile à étaler par la suite. Mettez-la dans un film étirable, puis au frais pour au moins 1 heure avant utilisation.
