كعكة ليمون رطبة رائعة مغطاة بالليمون والماسكاربوني شانتيلي. هناك القليل من الحلاوة في الحنك تكشف عن النكهات الرائعة لهذه الفاكهة الحمضية الجميلة. لمرة واحدة، قمتُ بخبز الكعكة في فرن غير مهوّى، لإبقائها مسطحة وتجنب حدوث تكتل في الوسط.
لكعكة في قالب مربع 20 سم أو قالب دائري 22 سم:
100 جرام زبدة غير مملحة
35 جم زيت
180 جرام سكر
2 بيضة كبيرة الحجم (120 جرام إجمالاً دون احتساب القشرة)
195 جم طحين
80 جم عصير ليمون 80 جم
135 جرام حليب نصف منزوع الدسم
قشر 2 ليمونة غير معالجة
1/2 ملعقة صغيرة من مسحوق الخبز
نصف ملعقة صغيرة من بيكربونات الصوديوم
1/4 ملعقة صغيرة ملح
بالنسبة للكريمة المخفوقة :
250 جرام ماسكاربوني بارد جدا
150 غ من الكريمة الكاملة المبردة 150 غ
قشر 2 ليمونة غير معالجة
50 جرام سكر بودرة
ضع الزبدة والزيت والسكر في وعاء محضر الطعام أو في وعاء.
يُمزج بمحضرة الطعام أو الملعقة.
أضف البيض، يجب أن يكون المجموع 120 غراماً.
اخلط ثم أضف جميع المكونات الأخرى، بما في ذلك قشر الليمونتين غير المعالجتين.
إذن، يوجد الدقيق وعصير الليمون والحليب والبيكنج بودر والبيكربونات والملح.
لا داعي للذعر إذا كان الخليط لا يبدو مناسباً تماماً! هذا أمر طبيعي، حيث يحدث تفاعل بين الحليب وعصير الليمون، ولكن مع الطهي، يعود كل شيء إلى طبيعته. تُسكب في صينية مربعة قياس 20 سم مبطنة بورق مقاوم للدهون، أو في صينية مستديرة قياس 22 سم.
اخبزيها لمدة 40 دقيقة في فرن مُسخّن مسبقاً على حرارة 165 درجة مئوية على حرارة تقليدية (حرارة ثابتة) ولكن ليس على حرارة مدعومة بمروحة، وإلا ستتكتل الكعكة مثل كعكة المادلان! لضمان بقائه مسطحاً عند الطهي، لا تستخدمي الحرارة بمساعدة المروحة.
يُترك ليبرد تماماً. عندما تصل إلى درجة حرارة الغرفة، تُحضر الكريمة المخفوقة. ضع جميع المكونات في وعاء محضر الطعام أو في وعاء.
يُخفق المزيج حتى يصبح لديك كريمة مخفوقة قاسية إلى حد ما. تُسكب الكمية بأكملها فوق الكعكة ويُسكب كامل الكمية فوق الكعكة ويُسوّى السطح.
Placez le beurre, l’huile et le sucre dans le bol de votre robot ou dans un récipient.
Mélangez avec la feuille du robot, ou à la cuillère.
Ajoutez les œufs, il doit y en avoir 120g en tout.
Mélangez puis ajoutez tous les autres ingrédients, y compris les zestes des deux citrons non traités. Il y a donc, la farine, le jus de citron, le lait, la levure chimique, le bicarbonate et le sel.
Pas de panique si le mélange ne vous parait pas si homogène ! C’est normal car il y a une réaction entre le lait et le jus de citron, mais en cuisant, tout rentre dans l’ordre. Versez dans un moule carré de 20cm chemisé de papier sulfurisé, ou un moule rond de 22cm de diamètre.
Faites cuire 40 minutes dans un four préchauffé à 165°C sur chaleur traditionnelle (chaleur statique) mais pas chaleur tournante, sinon le gâteau fera une bosse comme une madeleine ! Pour qu’il reste plat en cuisant, ne mettez pas la chaleur tournante (ou ventilée).
Laissez totalement refroidir. Quand il est à température ambiante, préparez la chantilly. Mettez tous les ingrédients dans le bol de votre robot ou dans un récipient.
Fouettez le tout pour avoir une chantilly assez ferme. Versez la totalité sur le gâteau et égalisez la surface. Vous pouvez ajouter davantage de zeste de citron !
Mettez au frais au moins deux heures avant de couper en parts.
