كما وعدت ، أعود إلى المدونة بوصفات جديدة بعد عدة رحلات. ذهبت إلى اليونان التي أحببتها قبل بضع سنوات وأردت حقًا صنع فطائر الكوسة والفيتا مرة أخرى ، المليئة بالنكهة ، بالشبت والنعناع. ستكون لذيذة ومقرمشة ودافئة ، مع زبادي يوناني بسيط ومملح قليلاً ومبرد. التباين رائع!
وصفة لحوالي عشرين دونات:
3 كوسة (بيضاء أو خضراء) ، حصلت على 550 جرام من اللحم المبشور
180 جرام من جبنة الفيتا
1 ملعقة كبيرة زيت زيتون
عدد قليل من أغصان الشبت
بضع أوراق نعناع
180 جرام دقيق (يتم تكييفه)
1/2 ملعقة صغيرة من مسحوق الخبز
ملح فلفل
زيت للقلي
اغسل الكوسة وقص النهايات. ابشر الكوسة. مع 3 كوسة ليست كبيرة جدًا ، حصلت على 550 جرامًا من اللحم المبشور.
أخذت الخلاط الخاص بي مع إناء للبشر (عادة الجزر ، ولكن هنا للكوسا) ، مع شفرات كبيرة إلى حد ما. صب اللب في وعاء.
يُملح الكوسا قليلاً ثم يُعصر في يديك حتى يخرج العصير.
هناك قدر لا بأس به من ذلك بالرغم من ذلك. كل هذا يتوقف على الكوسة الخاصة بك.
قطع الفيتا إلى قطع.
ضعيها في الوعاء مع ملعقة كبيرة من زيت الزيتون والملح (حافظي على قدر معقول!) والفلفل حسب الرغبة.
من الواضح أنني لم أستخدم جميع الأعشاب الموجودة في الصورة. أخذت بضع أوراق نعناع (دزينة) و4-5 أغصان من الشبت.
قطعيها ناعما بسكين واسكبيها في الحاوية.
أضف الدقيق. تعتمد الكمية على العصير المصنوع من الكوسة.
أضف ما يكفي من الدقيق لتشكيل عجينة لزجة.
ضعي مقلاة بها زيت بسمك 3-4 سم على الأقل (عباد الشمس ، بذور اللفت للطبخ) لتسخينها حتى 180 درجة مئوية. تُستخرج ملعقة كبيرة من الخليط وتُسكب بملعقة أخرى في الزيت الساخن.
يمكنك وضع أكبر عدد ممكن.
يصنع الفيتا الوقواق الخاص به ، لكنه لن يخرج كثيرًا ، ولن يمنع الطهي. اقلب الكعك بانتظام حتى يصبح لونه بنيا ذهبيا.
أخرجها كما تذهب على ورق ماص.
قدميه مع الزبادي اليوناني حيث يمكنك وضع القليل من زيت الزيتون والشبت أو النعناع المفروم والملح حسب الرغبة. يمكنك أيضًا إعادة تسخينها لمدة 8-9 دقائق في فرن ساخن ثم تركها تستعيد قوامها في غضون 10 دقائق.

Comme promis, je reviens sur le blog avec de nouvelles recettes après plusieurs voyages. Je suis parti en Grèce que j'avais adorée il y a quelques années et j'avais très envie de refaire ces beignets aux courgettes et à la feta, pleins de saveurs, avec de l'aneth et de la menthe. Ils seront délicieux croustillants et chauds, avec un simple yaourt grec légèrement salé bien frais. Le contraste est fantastique !
Lavez les courgettes et coupez les extrémités. Râpez les courgettes. Avec 3 courgettes pas trop grosses, j'ai obtenu 550g de chair râpée.
J'ai pris mon mixeur avec l'ustensile pour râper (en général les carottes, mas ici pour les courgettes), avec les lames assez grosses. Versez la chair dans un récipient.
Salez un peu les courgettes puis pressez-les dans vos mains pour que le jus sorte. Il y en a tout de même une bonne quantité. Tout dépend de vos courgettes.
Coupez la feta en morceaux. Mettez-la dans le récipient avec la cuillerée à soupe d'huile d'olive, salez davantage (restez raisonnables !) et poivres à votre goût.
Hachez finement les herbes au couteau et versez dans le récipient.
Ajoutez la farine. La quantité va dépendre du jus rendu par les courgettes.
Mettez juste assez de farine pour que cela donne une pâte qui doit rester collante.
Mettez une poêle avec au moins 3-4 cm d'épaisseur d'huile (tournesol, colza pour la cuisson) à chauffer à 180°C. Prélevez une cuillerée à soupe de pâte et avec une autre cuillère, versez dans l'huile chaude.
La feta fait son coucou, mais ne va pas sortir trop, ni empêcher la cuisson. Retournez régulièrement les beignets pour qu'ils soient bien dorés. Sortez-les au fur et à mesure sur un papier absorbant.
Servez avec un yaourt grec dans lequel vous pourrez mettre un peu d'huile d'olive, d'aneth ou de menthe ciselée, et à saler à votre goût. Vous pourrez aussi les réchauffer 8-9 minutes à four chaud puis les laissant reprendre leur croustillant en 10 minutes.
