Pour une fois, je vous propose une recette plus équilibrée que les plats ou desserts un peu décadents du blog ! Il faut dire qu’après l’écriture et les prises de vue de mon prochain livre (qui sort mi-mars), j’ai pris quelques kilos que je dois reperdre, sans pour autant mettre de côté le plaisir de cuisiner et de bien manger. Je vous propose donc ces galettes de lentilles corail qui ont le gros avantage d’être très rapides à faire, peuvent se congeler et ensuite se réchauffer au grille pain. J’en mange 3 pour un repas avec des légumes verts ou une bonne salade. On peut aussi les tartiner de fromage frais fouetté ou de tout ce que l’on souhaite. Je préfère en préparer le double de la quantité que je vous donne pour ensuite les sortir au dernier moment du congélateur et les réchauffer en 3 minutes au grille pain.
Mettez les lentilles corail à cuire pendant 2 minutes (oui c’est tout) à l’eau bouillante.
Égouttez-les bien puis mettez-les dans un mixeur avec le son d’avoine et la farine de riz complet.
Ajoutez l’œuf.
Versez les épices, l’eau, le lait la levure. En gros tous les ingrédients ! On ne peut pas faire plus simple.
Mixez jusqu’à avoir une belle pâte.
J’utilise ici ma poêle à blinis Skeppshult (marque dont j’avais parlé il y a des années !). Je mets juste un tout petit peu d’huile dans le fond au pinceau.
Versez deux cuillerées à soupe de pâte.
Laissez bien cuire puis retournez-les délicatement pour cuire l’autre face.
J’en avais fait le double, donc en tout 36.
Elles sont délicieuses chaudes, accompagnées de légumes ou d’une salade verte. Même au petit déjeuner elles sont parfaites ! Il suffit dans tous les cas de les passer une minute au grille pain pour les réchauffer.
