J’ai réalisé ces entremets dans de grandes coupes à champagne, mais libre à vous de choisir un autre ramequin ou verrine. J’ai mis les proportions pour 4 personnes. Cet entremet est très peu sucré en bouche, ultra frais, généreux, fondant et croustillant. Une véritable merveille, fraiche et parfaite pour un dessert festif.
Une recette vraiment très facile à faire pour la saison des fêtes de fin d’année. Une fine tartelette croustillante garnie de vinaigre balsamique et de poire en fines tranches, le tout surmonté de tranches de foie gras poêlé. Je recommande la pâte feuilletée maison (il m’en reste toujours dans le congélateur de mes cours de cuisine), mais je comprendrais que vous l’achetiez toute faite, prenez-en une de qualité dans ce cas !

Ne vous fiez pas à son apparence rustique ! Ce plat est à tomber ! Avec pourtant très peu de cèpes, ce plat est explosif en saveurs. Je vous conseille de le préparer la veille, car je l’ai trouvé encore meilleur le lendemain, surtout pour réaliser de belles parts. Ce gratin sera parfait pour accompagner une viande grillée, comme un magret de canard, une omelette ou une salade. Une façon originale et délicieuse de préparer la courge butternut. Et pourquoi pas pour le repas de Noël !

J’ai vu cette recette au menu d’un restaurant et je me suis dit que c’était une excellente idée ! La couche de sucre caramélisé ne dérange absolument pas et donne un contraste très agréable avec l’intérieur richement parfumé. Une jolie idée de recette pour une entrée réconfortante au cœur de l’automne !
