Salade fraiche de lentilles corail
J’avais très envie d’une petite salade ultra fraiche et saine tout en étant nourrissante. C’est le cas avec cette salade de lentilles corail, cuites al dente, avec des raisins secs, de l’oignon rouge mariné et de la menthe. Un petit temps de repos au réfrigérateur et elle sera prête à être dévorée pour un pique nique ou un buffet d’une belle journée ensoleillée !Â
Ingredients
- 500 g de lentilles corail
- 1 oignon rouge
- le jus d’un citron
- 100 g de raisins secs
- 1 c. à soupe de menthe séchéeÂ
- sel
- poivre
Sauce :Â
- 2 c. à soupe de tahiné
- 5 c. à soupe d’huile d’olive
- 2 c. à soupe de vinaigre (j’ai pris vinaigre balsamique blanc)
- 1 c. à soupe de sirop d’agave ou de miel
- 2 c. à café de moutarde
- sel
- poivre
Instructions
- Pour les lentilles, je ne les fais cuire que… 5 minutes à l’eau bouillante. C’est beaucoup moins que le temps de cuisson habituellement indiqué, mais cela donnera des lentilles al dente parfaites en salade !
- Rincez-les à l’eau froide puis égouttez-les bien. Ajoutez les raisins secs.
- Versez la menthe séchée.
- Coupez l’oignon rouge épluché en petits morceaux.
- Versez dans un récipient et versez de l’eau bouillante dessus.
- Laissez l’eau sur l’oignon pendant 15 secondes puis égouttez bien.
- Versez le jus de citron dessus : l’oignon devient rose ! Laissez reposer 15 minutes.
- Puis ajoutez dans la salade.
- Mélangez soigneusement. Salez et poivrez à votre goût.
- Mélangez tous les ingrédients de la sauce.
- Moutarde aussi, salez et poivrez.
- Ajoutez autant de sauce que nécessaire. Je n’ai pas tout mis, il devait m’en rester 2 cuillerées à soupe une fois versée dans la salade.
- Mélangez une dernière fois.
- Laissez reposer au moins 3 heures au frais avant de déguster !

I was craving a small salad that was ultra fresh and healthy while still being nutritious. That’s the case with this coral lentil salad, cooked al dente, with raisins, pickled red onion and mint. A little rest in the refrigerator and it will be ready to be devoured for a picnic or a buffet on a sunny day!
Recipe for 4 people:
- 500g of coral lentils
- 1 red onion
- juice of one lemon
- 100g of raisins
- 1 tablespoon dried mint
- salt pepper
Sauce:
- 2 tablespoons of tahini
- 5 tablespoons of olive oil
- 2 tablespoons of vinegar (I took white balsamic vinegar)
- 1 tablespoon of agave syrup or honey
- 2 teaspoons of mustard
- salt pepper
Instructions:
For the lentils, I only cook them… 5 minutes in boiling water. This is much less than the usual cooking time, but it makes for perfect al dente lentils in a salad!
Rinse in cold water and drain well. Add the raisins.
Pour in the dried mint.
Cut the peeled red onion into small pieces.
Pour into a container and pour boiling water over it.
Leave the water on the onion for 15 seconds and drain well.
Pour the lemon juice over it: the onion turns pink! Let stand for 15 minutes.
Then add to the salad.
Mix carefully. Put salt and pepper at your taste.
Mix all the ingredients for the sauce.
Mustard also, salt and pepper.
Add as much sauce as needed. I didn’t put it all in, I must have had 2 tablespoons left over once I poured it into the salad.
Mix one last time.
Let stand for at least 3 hours in the refrigerator before eating!
