هنا أحد إبداعاتي وهذا لاذع قد يفاجئ ضيوفك وربما نفسك! فول التونكا له نكهات من القهوة ، الفستق ، اللوز ، الفانيليا … الفطيرة مقرمشة مع كريمة غنية وغامض! يمكننا بالطبع اصنع كريم بروليه بحبوب التونكا في برطمانات ، أو تورتة كريم بروليه بنكهات أخرى ، مثل القهوة أو الفستق أو الفانيليا.
وصفة “تونكا فول كريم بروليه تارت” لـ 4 أشخاص:
عجينة حلوة:
-210 جرام طحين
– 125 جرام زبدة طرية غير مملحة
– 35 جرام سكر بودرة
– 25 غ من مسحوق اللوز
– 50 جم بيضة
كريم التونكا:
-5 صفار بيض
-250 مل حليب نصف دسم
-250 مل من الكريم السائل الكامل
-80 جرام سكر
– 40 جرام لبن بودرة كامل الدسم
-4 فول تونكا (+2 للزينة)
-1 + 1/2 ورقة جيلاتين
تحضير المعجنات الحلوة:
نضع اللوز المطحون والسكر البودرة والدقيق والملح والزبدة في قطع في وعاء العجن.
صنفرة الخليط لدمج الزبدة بحرف “k” الخاص بالروبوت. أو باليد!
أضف البيض المخفوق مقدمًا واخلطه فقط لمزجها ، ولكن ليس أكثر!
نضع كرة من العجين على ورق زبدة ونضع عليها ورقة ثانية. ينتشر بالأسطوانة بدون إضافة الدقيق ، كل شيء يبقى نظيفًا !!
نصيحة من برنارد: ها هي هذه الحيلة الجديدة للحصول على عجينة مثالية. هذا هو عدد طهاة المعجنات الرائعين الذين يفعلون ذلك. ننسى طريقة الفول!
ضع شريطًا من فيلم مطاطي ثم شريطًا ثانيًا بالعرض. ضع الفيلم جيدًا على الزاوية الشهيرة للعجين.
املأ حتى أسنانها بالدقيق!
ثم أغلق كل شيء مثل حقيبة صغيرة. يكاد العجين جاهز للدخول في الفرن مع كيس الطحين! نعم ، لن تذوب! سوف ينتفخ الدقيق ، ويضغط العجين على حافة الدائرة! كل ما عليك فعله هو وضعه في الثلاجة لمدة 30 دقيقة بينما يسخن الفرن. هذه الأكياس قابلة لإعادة الاستخدام ولا تذوب ، بشرط أن تأخذ تلك المناسبة لأفران الميكروويف !! درجة مئوية.
بالنسبة لأولئك الذين لا يريدون ، هناك ورق البرشمان والفاصوليا ، التي تعمل جيدًا أيضًا.
اتركيه ليبرد بينما يسخن الفرن إلى 180 درجة مئوية.
ثم يُطهى لمدة 35 دقيقة أو حتى تنضج المعجنات ، لأنه أثناء الطهي عند 95 درجة مئوية من كريم بروليه ، لن يتم طهي المعجنات في الواقع !!
تُخرج العجينة من الفرن ، ترفع كيس الدقيق. اترك العجينة في الدائرة.
نضع الفرن على 95 درجة مئوية.
هذا ما تبدو عليه حبوب التونكا التي تأتي من غيانا الفرنسية!
ضعي في قدر ، الحليب ، الكريمة ، نصف السكر. ابشري حبوب التونكا فوق هذه المقلاة.
يوضع على نار خفيفة حتى الغليان ويترك لينقع لمدة 10 دقائق.
ضعي صفار البيض الخمسة والنصف الآخر من السكر ومسحوق الحليب في وعاء. قبل كل شيء ، لا تستخدم المبيض!
أعد تسخين الحليب المنقوع واسكبه فوق صفار البيض.
ضع كل شيء مرة أخرى على نار هادئة وبدون توقف عن الخلط ، احضره إلى 85 درجة مئوية ، لذا اطبخ مثل الكاسترد!
يرفع عن النار ويضاف الجيلاتين. خلط جيد.
تمر عبر منخل لتصفية حبوب التونكا.
تصب في قاع المعجنات الحلوة المطبوخة (مع ترك الدائرة !!) وتعود إلى الفرن عند 95 درجة مئوية لمدة ساعة و 15 دقيقة. إذا كان هناك الكثير من الكريمة ، اسكبي الباقي في السلطانيات وضعيها في الفرن مع الفطيرة! كل هذا يتوقف على حجم الدائرة المختارة …
أخرجه من الفرن ودعه يبرد كليا. بمجرد الوصول إلى درجة حرارة الغرفة ، ضعيها في الثلاجة لمدة 3 ساعات على الأقل.
قبل التقديم بعشرين دقيقة ، يُرش الجزء العلوي من الفطيرة بالسكر ويُكرمل باستخدام موقد اللحام. برد لمدة 15 دقيقة لإعادة تجميد الكريمة والسكر.
قدميه عن طريق التزيين بحبتين من حبوب التونكا الأخرى!
