“pudim de leite” (يُنطق “pudjim dji leïtche”) هو تخصص يتم تقديمه في كل مكان في البرازيل للحلوى. تبدو ككاسترد الكراميل ، لكن التحضير أكثر من بسيط ، والنتيجة مذهلة. اتساق pudim de leite ثابت ودسم في نفس الوقت. تعتمد هذه الوصفة على الحليب المكثف المحلى ، وتلعب كثيرًا على المذاق والقوام النهائي. نشعر بمذاق مربى الحليب. ملعقة من هذه الأعجوبة ، وهي حب من النظرة الأولى!
وصفة لايت بوديم:
-5 بيضات
– علبتان من الحليب المكثف المحلى (397 جرام لكل منهما)
– نفس كمية الحليب نصف الدسم مثل الحليب المكثف المحلى
150 جرام سكر
يُسخن الفرن على حرارة 180 درجة مئوية.
نضع السكر في قدر مع قليل من الماء (30 جم) ونتركه حتى الغليان.
يجب أن يتكرمل السكر ويكون لونه كهرمانيًا لطيفًا.
عندما يصبح الكراميل جاهزًا ، اسكبه في قالب (مع وجود ثقب في المنتصف ، سيكون الجزء العلوي من التقاليد!).
تحضير الكريمة: صب علبتي الحليب المكثف المحلى في الخلاط.
املأ الصندوقين الفارغين بالحليب نصف الدسم واسكبه في الخلاط. لذلك لدينا نفس الكمية من الحليب المكثف المحلى والحليب نصف الدسم.
أضف 5 بيضات.
ابدأ الخلاط لمدة دقيقة واحدة حتى يتجانس جيدًا.
تصب في القالب فوق الكراميل. نضع القالب في طبق خبز واملأ هذا الطبق بالماء المغلي. يجب أن يكون القالب نصف مغمور على الأقل.
يغطى بورق الألمنيوم ويوضع في الفرن على حرارة 180 درجة مئوية.
طهي لمدة 1h15-1h30. يجب أن يوضع الكريم ويهتز قليلاً في المنتصف. كما يكفي زرع سكين. يجب ان تخرج نضيفه.
دعه يبرد تماما ثم ضعيه في الثلاجة لمدة ثلاث ساعات. قبل التقديم مباشرة ، املأ الحوض بالماء الساخن جدًا وانقع القالب فيه لمدة 10 ثوانٍ.
