كنت في المغرب الأسبوع الماضي وعدت بالعديد من الوصفات الجديدة. أقدم لكم هذه الحراش الأصلية ، المحشوة بالتابينادي السريع محلي الصنع. فرحة فاتح للشهية !! الحرشا هي فطائر من سميد القمح القاسي تستهلك على نطاق واسع في جميع أنحاء المغرب العربي. أعطاني هذا الإصدار الشريطي من صديقتي لالا مريم وبوشرى. أشكرهم مرة أخرى بحرارة على موافقتهم على مشاركة هذه الوصفة اللذيذة معنا هنا! يمكنك طهيها في مقلاة أو حتى في الفرن.
مكونات :
تابناد:
225 جرام زيتون أسود
5 أغصان من البقدونس
نصف فص ثوم
25 جرام من الأنشوجة
10 جرام زيت زيتون
هارشاس:
620 جرام من السميد الناعم (وليس السميد الكسكس!)
100 جرام زبدة نصف مملحة
60 جرام زيت
1 ملعقة صغيرة ملح
2 عبوة بيكنج بودر
175 جرام حليب كامل الدسم
150 جرام ماء
قم أولاً بإعداد التابيناد.
نضع الزيتون والثوم والبقدونس وزيت الزيتون في وعاء أو خلاط.
يمكنك إضافة الأنشوجة!
امزج للحصول على شريط ليس رقيقًا جدًا.
تذوقه ، إنه لذيذ بالفعل!
صب السميد الناعم في وعاء.
ذوب الزبدة.
يُسكب الزيت والزبدة المذابة في السميد.
يُضاف الملح ويُخلط كل شيء يدويًا لتغلف السميد جيدًا بالدهن.
توضع جانبا 175 جم من هذا الخليط في وعاء منفصل. هذا سوف يساعدنا لاحقا اسكبي البيكنج بودر في باقي السميد (وليس 175 جم!).
ثم صب الماء والحليب.
نخلط ثم نترك السميد يمتص السائل لمدة عشرين دقيقة.
خذ كرة بحجم بيضة. اصنع تجويفًا في المركز.
ضع بعض الشريط اللاصق.
ثم أغلق بعناية.
نأخذ القليل من السميد جانباً.
ويرش سطح الكرة.
ضع الكرة في مقلاة ساخنة وافردها يدويًا في قرص صغير.
افعل الشيء نفسه بالنسبة لبقية المكونات. اقلب الفطائر عندما تبدأ في التحول إلى اللون البني.
وها أنت ذا !!
يمكنك أيضًا وضع الكرات غير المفلطحة في الفرن على حرارة 180 درجة مئوية لمدة 20-25 دقيقة.
سوف تكون الحرشات أكثر هشاشة.
أضمن لك النجاح كفاتح للشهية !! أعد تسخينها إذا لزم الأمر لمدة 10-15 دقيقة في الفرن عند 165 درجة مئوية. سوف تجد بعد ذلك المقرمش اللذيذ.
