ها هي وصفة Malakoffs. لقد تمكنت من اكتشاف هذا التخصص السويسري الرائع في “رحلة الطهي: لوزان” . إنه طبق من كانتون فود يعتمد على Gruyère ، وهو من كانتون فريبورغ في سويسرا. إنها قبة جبن فوق شريحة خبز ثم تقلى. قد يبدو الأمر ثقيلًا وغير قابل للهضم ، لكن الأمر برمته هش للغاية ، وذوبان ، ولذيذ بشكل لا يصدق بحيث يتعين عليك على الأقل محاولة إقناع نفسك أنه ليس مجنونًا كما يبدو!
لقد قمت بتأليف هذه الوصفة بمفردي لأن الوصفات الموجودة في الكتب أو حتى مباشرة في المطعم المعني لم تنجح على الإطلاق أو لم تعطِ القوام المطلوب أو الفوندان. صفة مميزة. لذلك بدأت من جديد وواجهت مشكلة الاختبار لمدة 3 أيام كاملة مع أكثر من 12 اختلافًا مختلفًا. لقد توصلت أخيرًا إلى هذه الوصفة التي أقدمها هنا والتي تكاد تكون متطابقة على جميع المستويات مع تلك الخاصة بـ Bursins. بمجرد العثور على النسب ، تكون هذه الوصفة رائعة لأنها سهلة التحضير ولذيذة للاستمتاع بها. بشكل عام ، نحن نأكل 2 أو 3 ولكن ليس أكثر لأنها ممتلئة تمامًا وعليك أن تجد وقت الطهي حتى يظل الجبن يذوب ولكن ليس غير مطبوخ جيدًا.
وصفة لـ 10 مالاكوف:
-500 جرام من Gruyère (خاصةً ليس Emmental !!) – 60 مل من النبيذ الأبيض الجاف -2 بيضة (55 جرام لكل منهما) -2 ملاعق صغيرة من صودا الخبز -120 جرام طحين نوع 55 – 140 جرام حليب كامل الدسم -1 صغيرفص ثوم -2 ملاعق صغيرة من الكيرش (غير فاخر …) – ملح ، فلفل ، جوزة الطيب – 16 شريحة خبز أبيض
لا تنس أن Gruyère الحقيقي ليس به ثقب!
ابشر gruyère بالآلة أو باليد.
ثم يقطع الجبن المبشور بسكين.
ضع الجبن في وعاء. يضاف البيض والدقيق والملح والفلفل. نضيف الحليب والنبيذ الأبيض والكرش.
نخلط جيداً ونضيف الثوم المهروس وجوزة الطيب المبشورة حديثاً. لا تبخل على الأخيرة لأنها هي التي تعطي هذا الطعم هكذا خاص إلى malakoffs!
أضف صودا الخبز.
تخلط جيدا للحصول على عجينة سهلة الإمساك.
دع العجين يرتاح لمدة ساعة في الثلاجة لجعله أكثر ضغطًا. هذه العملية ضرورية!
قطع دوائر قطرها 6.5-7 سم في خبز شطائر عالي الجودة.
إذا لم تتمكن من العثور على قطاعة بسكويت يبلغ قطرها 6.5-7 سم ، يمكنك البحث عن سدادة صندوقية أو أي شيء بهذا القطر.
قطع بقطع بسكويت أو بسكين حول الجسم الموجود في القطر ملائم.
زين شرائح الخبز بحشوة الجبن بملعقة كبيرة لتشكيل قبة لا يقل ارتفاعها عن 4 سم في المنتصف.
تسخين الزيت إلى 190 درجة مئوية. ضع المالاكوف في الزيت الساخن مقلوبًا.
عندما يتحول لون مالاكوف إلى اللون البني الذهبي ، اقلبه واترك جانب الخبز يُطهى.
الطبخ هو عنصر أساسي لنجاح malakoffs. كثرة الطهي وسيصبح الجبن سائلًا أكثر في المنتصف ، لكن ليس كافيًا وسيكون للحشو قوام دقيق. لذلك يجب أن تطبخ لمدة 5 دقائق. 3-4 دقائق على جانب القبة ودقيقتان على جانب الخبز.
اتركيه يصفى على ورق ماص واستمتع به ساخناً جداً ، عندما يسيل الجبن جيداً من الداخل!
