لقد سُئلت عدة مرات عن وصفة حلوى الماكرون بالشوكولاتة (والتي أقدمها هنا أيضًا!) لكنني لا أجد هذه الوصفة مثيرة للاهتمام حقًا. تبدو النتيجة مثل كعكة الشوكولاتة. بينما مع توت العليق ، تصبح النتيجة مذهلة! غاناش الشوكولاتة مع كوليس التوت ستجعل هذه المعكرونة تبدو أكبر!
أولاً ، انتقل إلى شرحي لقاعدة المعكرونة التي نضيف فيها 15 جرامًا من مسحوق الكاكاو غير المحلى ومسحوق تلوين الطعام الأحمر.
وصفة توت العليق بالشوكولاتة والغاناش:
– 200 جرام شوكولاتة (أستخدم مانجاري كوفيرتور من فالرونا بنسبة 66٪)
تحضير وصفة المعكرون الأساسية . أضيفي 15 جم من الكاكاو غير المحلى قبل نخلها في 300 جم من تانت صب (لكل ماكرون الشوكولاتة بالكامل ، أضيفي 30 جم!).
نحصل على صبغة الشوكولاتة (يوجد فيها بياض بيض نيء!).
ويضاف في المرينغ الإيطالي ، نقطتين أو ثلاث نقاط سكين من مسحوق تلوين الطعام الأحمر. أضع الكشمش الأحمر (بالنسبة لجميع أنواع المعكرونة المصنوعة من الشوكولاتة ، ضع طرف سكين واحد من التلوين الأحمر).
ونخلط كالعادة ثم المعكرون.
ونترك القشرة لمدة ساعة على الأقل.
بالنسبة للغاناش ، أضيفي كوليس التوت والمربى والسكر الهلامي. يمكنك ، إذا كنت ترغب في ذلك ، وضع 170 جرامًا من مربى التوت المصنوع من البذور بدلاً من ذلك. ربما يستغرق التحضير وقتًا أقل بكثير من الكولي ، ولأنه ممزوج بالشوكولاتة ، فإن الاختلاف ليس واضحًا.
سخني الكولي (أو المربى).
أضف الشوكولاتة (من ناحيتي ، المنجاري couverture الذي يتناسب تمامًا مع التوت!
تخلط جيدا ثم تضاف الكريمة والزبدة.
خلط جيد. الغاناش في هذه المرحلة له مظهر غير جذاب ومتكتل إلى حد ما. اتركيه للراحة لمدة 20 دقيقة في الثلاجة ثم اخفقي بمضرب كهربائي أو يدوي. كل شيء سيكون متجانسًا.
ضع الغاناش (عندما تجد مظهرًا جميلًا) في كيس المعجنات واملأ المعكرون بطبقة غنية من الغاناش.
اتركها لترتاح طوال الليل في الثلاجة في وعاء محكم الغلق قبل تناولها!
