Me han pedido varias veces la receta de los macarrones de chocolate (¡que también doy aquí!) pero la verdad es que esta receta no me parece interesante. El resultado se parece demasiado a un pastel de chocolate. Pero con la frambuesa, ¡el resultado es impactante! El ganache de chocolate con coulis de frambuesa hará que estos macarrones sean aún más impresionantes.
En primer lugar, ve a mi explicación de la base de macarrones en la que añadimos 15g de cacao en polvo sin azúcar y colorante rojo en polvo.
Receta de ganache de chocolate y frambuesa:
-200g de chocolate (yo uso Valrhona manjari couverture al 66%)
-140 g de coulis de frambuesa -30g de azúcar gelatinoso (azúcar de mermelada).
-20g de mantequilla blanda
-20g de nata líquida
Todos los macarrones de chocolate:
-230g de chocolate
-200g de nata líquida
-30g de mantequilla
Prepare la receta básica de los macarrones. Antes de tamizar los 300 g de tant pour tant, añadir 15 g de cacao sin azúcar (para los macarrones de chocolate, añadir 30 g).
El resultado es un chocolate sobrante (¡tiene la clara de huevo cruda!).
Añadir dos o tres toques de colorante rojo al merengue italiano. Utilicé grosella roja (para los macarrones de chocolate, utilice una pizca de colorante rojo).
Y mezclar como siempre y poner en el macarrón.
Deje que se forme una costra durante al menos una hora.
Para la ganache, añadir el coulis de frambuesa y el azúcar gelatinoso. Si lo desea, puede utilizar 170 g de mermelada de frambuesa con semillas en su lugar. Probablemente se tarda mucho menos en preparar que el coulis y, al estar mezclado con chocolate, la diferencia no es evidente.
Calentar el coulis (o la mermelada).
¡Añadir el chocolate (por mi parte, el manjari couverture que va perfectamente con la frambuesa!
Mezclar bien y luego añadir la nata y la mantequilla.
Mezclar bien. El ganache en este punto parece un poco grumoso. Dejar reposar durante 20 minutos en un lugar fresco y luego batir con un batidor eléctrico o manual. Todo se homogeneizará.
Poner el ganache (cuando esté bien) en una manga pastelera y cubrir los macarrones con una generosa capa de ganache.
Déjelos toda la noche en una caja hermética antes de comerlos.
