Já me pediram várias vezes a receita dos macarrões de chocolate (que também dou aqui!) mas realmente não acho esta receita interessante. O resultado é demasiado parecido com um bolo de chocolate. Mas com framboesa, o resultado torna-se impressionante! O ganache de chocolate com coulis de framboesa vai tornar estes macaroons ainda mais impressionantes!
Primeiro, vá à minha explicação sobre a base de macaroon em que adicionamos 15g de pó de cacau não adoçado e pó de corante vermelho.
Receita para ganache de chocolate com framboesa:
-200g de chocolate (uso 66% de couverture Valrhona manjari)
-140g de framboesa coulis -30g de açúcar gelatinoso (açúcar de compota).
-20g de manteiga mole
-20g de creme completo
Todos os macaroons de chocolate:
-230g de chocolate
-200g de creme completo
-30g de manteiga
Preparar a receita básica de macaroon. Antes de peneirar nos 300g de tant pour tant, adicionar 15g de cacau não adoçado (para os macarrões totalmente de chocolate, adicionar 30g!).
O resultado é uma clara de ovo crua (tem a clara de ovo em bruto!).
Adicionar dois ou três dabs de pó de coloração vermelha ao merengue italiano. Usei groselha vermelha (para todos os macarrões de chocolate, usar uma pitada de corante vermelho).
E misturar como de costume e colocar o macaroon.
Partir para a crosta durante pelo menos uma hora.
Para o ganache, adicionar o coulis de framboesa e o açúcar gelatinoso. Se desejar, pode utilizar 170g de compota de framboesa semeada. Provavelmente leva muito menos tempo a preparar do que o coulis e como é misturado com chocolate, a diferença não é óbvia.
Aqueça o coulis (ou compota).
Adicione o chocolate (pela minha parte, o manjari couverture que combina perfeitamente com a framboesa!
Misturar bem e depois adicionar as natas e a manteiga.
Misturar bem. O ganache neste ponto parece um pouco grumoso. Deixar repousar durante 20 minutos num local fresco e depois bater com um batedor eléctrico ou manual. Tudo isto será homogeneizado.
Colocar o ganache (quando parecer bom) num saco de tubagem e cobrir os macarrões com uma camada generosa de ganache.
Deixe-os numa caixa hermética durante a noite antes de comer!
