كعكة بريتون ، كما قد تتوقع ، مصنوعة من الزبدة المملحة! إنه يحتفظ لفترة طويلة. تاريخ هذه الكعكة غامض للغاية ، لكن كتب الطبخ تحكي عنها من النصف الثاني من القرن التاسع عشر. على أي حال ، فإن تحضيرها بسيط وسيسعد الجميع!
وصفة “كعكة بريتون” لـ 8 أشخاص:
-8 صفار بيض (+1 لتحمير الكيك) -450 جرام طحين -280 جرام سكر ناعم – طرف السكين مسحوق الخبز -320 غ من الزبدة المملحة شبه المملحة
سخن الفرن على 220 درجة مئوية. اخلطي الصفار والسكر بدون تبييضهما في وعاء.
أضيفي الزبدة المخففة وادمجيها جيدًا. يتم الحصول على خليط دسم.
أضف الدقيق بطرف سكين من مسحوق الخبز (إنها حقًا كمية صغيرة من الخميرة التي ستمنع الكعكة من أن تكون كتلة مضغوطة !!).
وعاء زبدة ودقيق بقطر 22 سم (بحافة قابلة للإزالة). نضع العجينة في القالب باليد ودهنها بصفار البيض. ثم نقوم بضربة فرشاة مغموسة في الحليب لتخفيف صفار البيض قليلاً. ثم قم بعمل تقاطعات بشوكة.
ضعي الفرن على حرارة 220 درجة مئوية لمدة 20 دقيقة ، ثم اخفضي الفرن إلى 180 درجة مئوية لمدة 35 دقيقة أخرى. مباشرة من الفرن ، قم بفك القالب واتركه يبرد على رف سلكي.
يجب أن تعلم أنه في بريتاني ، تؤكل كعكة بريتون مقطعة إلى ألماس !!
