La tarta bretona es, como cabría esperar, de mantequilla salada. Se conserva durante mucho tiempo. La historia de este pastel es bastante confusa, pero los libros de cocina lo mencionan a partir de la segunda mitad del siglo XIX. En cualquier caso, es fácil de hacer y a todo el mundo le encantará.
Receta de «pastel bretón» para 8 personas:
-8 yemas de huevo (1 para dorar el pastel) -450 g de harina -280 g de azúcar en polvo la punta de un cuchillo polvo de hornear -320 g de mantequilla, media sal
Precalentar el horno a 220°C. Mezclar las yemas y el azúcar sin escaldar en un bol.
Añadir la mantequilla ablandada y mezclar bien. El resultado es una mezcla cremosa.
Añadir la harina con la punta de un cuchillo de levadura (¡es una cantidad muy pequeña de levadura que evitará que el pastel sea un bloque compacto!)
Unte con mantequilla y enharine un molde desmontable de 22 cm de diámetro. Poner la masa en el molde a mano y pincelar con yema de huevo. A continuación, la yema se diluye ligeramente con un pincel mojado en leche. Luego haz cruces con un tenedor.
Introducir en el horno a 220°C durante 20 minutos, luego bajar el horno a 180°C durante otros 35 minutos. Sacar del horno y dejar enfriar sobre una rejilla.
Debes saber que en Bretaña, el pastel bretón se come cortado en diamantes.
