معجون الفستق يشبه معجون البندق والبرالين ، وهو أساس طهوي في المعجنات. يستغرق صنعه وقتًا أطول قليلاً من الآخرين ، وخاصة الطحن الذي يستمر حوالي 30 دقيقة. لكن النتيجة تستحق الجهد. بهذه العجين سنكون قادرين على صنع الفستق الحلبي ، المعكرون ، كريم بروليه ، الممولين ، إلخ …
وصفة:
250 جرام فستق حلبي خام
125 جرام سكر
35 جرام ماء
60 جرام لوز مطحون
1 ملعقة طعام زيت
بضع قطرات من مستخلص اللوز المر
ابدأ بتحميص الفستق على ورقة خبز منذ 15 دقيقه عند 150 درجة مئوية.
بمجرد تحميص الفستق ، ضعه في وعاء.
سخني السكر على نار خفيفة مع الماء.
عندما تصل درجة حرارة الشراب إلى 121 درجة مئوية ، يُسكب مباشرة فوق الفستق المحمص.
تخلط جيدا حتى تتغطى جميع الفستق في القطر.
سوف يتبلور السكر ، وهذا طبيعي تمامًا!
بمجرد أن يبرد الفستق ، ضعيهم في وعاء الخلاط مع ملعقة كبيرة من الزيت و 4 قطرات من مستخلص اللوز المر ومسحوق اللوز.
تشغيل. سوف يستغرق الأمر وقتًا طويلاً للحصول على تناسق معجون ، لكنه لا يزال يعمل. حتى يكون المريض!! من الأفضل إيقاف الجهاز من وقت لآخر لتجنب ارتفاع درجة حرارته! إليكم صور المراحل المختلفة التي يمر بها الفستق!
بمجرد أن تصبح العجينة جاهزة ، ضعيها في وعاء محكم الإغلاق ثم ضعيها في الثلاجة. العجين يحفظ لفترة طويلة. في كلتا الحالتين ، يمكنك رؤيته بوضوح من خلال الرائحة واللون.
