A pasta de pistácio é, tal como a pasta de avelã e a pralina, um alimento básico na confecção de pastelaria. Leva um pouco mais de tempo a fazer do que os outros, especialmente a moagem, que leva quase 30 minutos. Mas o resultado vale a pena o esforço. Com esta massa podemos fazer pistachio mousseline, macaroons, crème brûlée, financiadores, etc.
Receita:
250g pistácios brutos
125g de açúcar
35g de água
60g de pó de amêndoa
1 colher de sopa de óleo
algumas gotas de extracto de amêndoa amarga
Comece por torrar os pistácios numa folha de cozedura durante 15 minutos a 150°C.
Quando os pistácios estiverem torrados, coloque-os numa tigela.
Aquecer o açúcar em lume brando com a água.
Quando o xarope atingir 121°C, verta-o directamente sobre os pistácios assados.
Mexer bem para revestir todos os pistácios com xarope.
O açúcar vai cristalizar, isto é normal!
Uma vez os pistácios arrefecidos, colocá-los na tigela de um liquidificador com a colher de óleo, 4 gotas de extracto de amêndoa amarga e o pó de amêndoa.
Ligar. Demorará algum tempo a obter a consistência da massa, mas ainda funciona. Portanto, seja paciente! É melhor desligar o aparelho de vez em quando para evitar o sobreaquecimento! Aqui estão fotos das diferentes etapas pelas quais passam os pistácios!
Assim que a massa estiver pronta, colocá-la numa caixa hermética e arrefecê-la. A massa mantém-se durante muito tempo. De qualquer modo, pode-se ver pelo cheiro e pela cor.
