La pasta de pistacho es, al igual que la pasta de avellana y el praliné, un elemento culinario básico en la repostería. Su elaboración es un poco más larga que la de los demás, sobre todo el triturado, que tarda casi 30 minutos. Pero el resultado merece la pena. Con esta masa podemos hacer mousseline de pistacho, macarrones, crème brûlée, financiers, etc.
Receta:
250 g de pistachos crudos
125g de azúcar
35g de agua
60g de polvo de almendra
1 cucharada de aceite
unas gotas de extracto de almendra amarga
Comience por tostar los pistachos en una bandeja de horno durante 15 minutos a 150°C.
Una vez tostados los pistachos, colóquelos en un bol.
Calentar el azúcar a fuego lento con el agua.
Cuando el almíbar alcance los 121°C, viértalo directamente sobre los pistachos tostados.
Remover bien para cubrir todos los pistachos con el almíbar.
El azúcar se cristalizará, ¡es normal!
Una vez que los pistachos se hayan enfriado, colóquelos en el bol de una batidora con la cucharada de aceite, 4 gotas de extracto de almendra amarga y la almendra en polvo.
Enciende. Tardará un poco en conseguir la consistencia de la masa, pero aún así funciona. Así que tened paciencia. Es mejor apagar el aparato de vez en cuando para evitar el sobrecalentamiento. ¡Aquí tienes fotos de las diferentes etapas por las que pasan los pistachos!
Una vez que la masa esté lista, ponla en una caja hermética y enfríala. La masa se conserva durante mucho tiempo. De todos modos, se nota el olor y el color.
