حساء المعكرونة مع الزلابية “وون تون” هو طبق كلاسيكي رائع للمطبخ الصيني. حاولت صنعه بدون إضافة مكعب مرق وون طن خاص ، وبالتالي أعطيك الوصفة المصنوعة بالكامل “محلية الصنع” بصرف النظر عن عجينة الوون. “فاز تون” تعني حرفيًا “أكل السحاب” … تطفو الرافيولي بالفعل في هذا الحساء اللذيذ. كما أنني أضع وصفة معكرونة “منزلية الصنع” ، ولكن يمكنك تسهيل الأمر بشراء المعكرونة الصينية الجاهزة …!
وصفة حساء الرافيولي المعكرونة “فاز تون” لـ 4 أشخاص:
نصيحة برنارد: إذا كنت تريد أن تصنع المرق بنفسك ، فستبقى دجاجة. يمكنك وضعها في الثلاجة وتناولها (إزالة القشرة) كما هو الحال مع القليل من المايونيز أو عمل سلطة دجاج .. بدلاً من التخلص منها!
تحضير عجينة النودلز: ضعي الدقيق ونشا الذرة والكركم والبيض وملعقة الزيت في وعاء أو في وعاء العجن.
ابدأ بالعجن مع إضافة أكبر قدر من الماء حسب الضرورة …
اعجن لمدة عشر دقائق ثم شكل كرة باستخدام نشا الذرة.
اتركيها لترتاح لمدة ساعة في الثلاجة في غلاف بلاستيكي ثم افردي العجين بملاءة العجين …
ثم قم بقصها ، مع الحرص على تركها تجف قليلاً لمنعها من الالتصاق بالقطع النهائي …
تحضير حشوة الرافيولي عن طريق وضع جميع المكونات (ماعدا المرق) في وعاء … تخلط جيدا لدمج كل شيء.
(في الصور لم أضع الجمبري ، لكن عندها يجب أن تضعهم !!).
نضيف المرق ويخلط جيدا.
أخرج أغلفة فطيرة باللحم.
ضعي ملعقة صغيرة من الحشوة في منتصف قاع الصفيحة.
اطوي العجين مرة واحدة.
ثم مرة ثانية …
ثم أغلق بطي الجوانب باتجاه المركز وختمها بنقطة ماء. في الصورة تم توجيه الرافيولي نحو الكاميرا …
افعل الشيء نفسه مع بقية الحشوة.
في حالة المعكرونة محلية الصنع: اطهي المعكرونة في مقلاة منفصلة وقم بتصفية النودلز.
وإلا تضاف المعكرونة مع الرافيولي في حالة المعكرونة الجاهزة …
للعودة مرق في قدر ، أضف بوكشوي جديد. يُغلى المزيج. أضف الرافيولي.
تصبح جاهزة عندما ترتفع الرافيولي إلى السطح … (دقيقتان).
نضيف النودلز المطبوخة ونضيف بضع أغصان من الكزبرة …
