اود ان اشكر تحياتي الحارة جان فرانسوا لإعطائي وصفة فطيرة الليمون. كنت قد نشرت بالفعل وصفة فطيرة الليمون (انظر الوصفة هنا) . هذا ليس له علاقة ، لأن قشطة الليمون تُطهى مباشرة في الفطيرة ولا تحتوي على طحين أو لوز مطحون. النتيجة؟ كعكة مقرمش مع كريمة منعشة جدا غنية بالزبدة والنكهة. أكثر ما لا يصدق هو الطبخ … الفطيرة تغلي وتصدر ضوضاء (هل تغني ؟؟) وقبل كل شيء تنشر رائحة لذيذة في جميع أنحاء المنزل. الجميع يسيل لعاب مشاهدة هذه الفطيرة اللذيذة. شكراً جزيلاً لجان فرانسوا على إعطائي والسماح لي أن أشارككم فطيرة “قاتل الليمون” …. لاختبار عاجل …!
وصفة لفطرتين مقاس 19 سم أو فطيرة بطول 26 سم:
عجينة من اختيارك:
العجين الحلو المكسور:
-250 جرام دقيق
– 40 جرام سكر
– 125 جم زبدة طرية باردة
– ماء بارد (60 إلى 70 جرام)
أو معجناتي الحلوة:
-210 جرام طحين
– 125 جرام زبدة غير مملحة مقطعة
– 25 غ من مسحوق اللوز
– 50 جرام بيض مخفوق
-1 رشة ملح
– 35 جرام سكر بودرة
– 1 حبة فانيليا
كريم الليمون:
-225 جرام سكر
– 120 جرام زبدة ذائبة غير مملحة
-3 بيضات
-3 ليمون: بشر + عصير
-1 رشة ملح
لتحضير المعجنات الحلوة. ضع السكر والدقيق والزبدة الباردة مقطعة إلى قطع في وعاء محضر الطعام أو في وعاء.
تخلط باليد أو مع محضر الطعام (ك) حتى تحصل على نوع من المعجون الرملي.
أضف قدر ما تحتاجه من الماء البارد لعمل كرة من العجين.
ضعي العجينة بشكل مسطح تحت طبقة رقيقة ثم ضعيها في الثلاجة لمدة ساعة.
لخيار المعجنات الحلوة الكلاسيكية:
ضعي اللوز المطحون والسكر البودرة وداخل قرنة الفانيليا والدقيق والملح والزبدة في قطع في وعاء العجن.
صنفرة الخليط لدمج الزبدة بحرف “k” الخاص بالروبوت. أو باليد!
أضف البيض المخفوق مقدمًا واخلطه فقط لمزجها ، ولكن ليس أكثر!
ضعي العجينة بشكل مسطح تحت طبقة رقيقة ثم ضعيها في الثلاجة لمدة ساعة.
اخلطي البيض والزبدة المذابة والسكر.
نضيف نكهة الليمون الثلاثة وعصيرها.
افردي العجينة (أيًا كانت العجين الذي تختارينه) على سطح عمل مرشوش قليلًا بالدقيق أو ورق زبدة.
دائرة مظلمة 26 سم أو اثنتين 18 أو 19 ، توضع على ورق رق.
وخز قاع العجين.
تُخبز العجينة بطريقة أعمى بالطريقة التي تفضلها. هنا طريقة كيس الطحين … انظر وصفات لاذعة للتفسيرات.
اخبزيها على حرارة 180 درجة مئوية لمدة 10 دقائق ثم أخرجي الكيس. اخبزيها مرة أخرى لمدة 10 دقائق ، مع تربيت قاع المعجنات جيدًا.
أضيفي كريمة الليمون واخبزيها لمدة 30 إلى 40 دقيقة.
يجب أن يغلي الكريم ويبدأ في التحول إلى اللون البني على السطح ، تمامًا مثل كريم بروليه.
دعها تبرد على الرف.
