Gostaria de agradecer calorosamente a por me ter dado a sua receita de tarte de limão. Já tinha publicado uma receita de tarte de merengue de limão (ver a receita AQUI). Este não tem nada a ver com isto, pois o creme de limão é cozido directamente na torta e não contém farinha nem pó de amêndoa. O resultado? Uma torta crocante com um creme picante rico em manteiga e sabor. O mais incrível é a cozinha… A torta ferve, faz barulho (canta?) e sobretudo espalha um cheiro delicioso por toda a casa. Todos salivam enquanto assistem a esta deliciosa tarte cozida. Portanto, um grande obrigado a Jean-François por me ter dado permissão para partilhar a sua tarte assassina de limão consigo …. A deve tentar…!
Receita para 2 tortas de 19cm ou 1 de 26cm:
Massa à sua escolha:
Massa doce de massa quebrada:
-250g de farinha
-40g de açúcar
-125g de manteiga fria suave
-água fria (60 a 70g)
Ou a minha doce pastelaria:
-210g de farinha
-125g de manteiga mole em pedaços
-25g de pó de amêndoa
-50g de ovo batido
-1 pitada de sal
-35g de açúcar de confeiteiro
-1 vagem de baunilha
Creme de limão:
-225g de açúcar
-120g de manteiga mole derretida
-3 ovos
-3 limões: sabor + sumo de limão
-1 pitada de sal
Para os doces de massa quebradiça. Colocar o açúcar, a farinha e a manteiga fria cortados em pedaços na tigela de um processador de alimentos ou numa tigela.
Misturar à mão ou com um processador de alimentos (o k) até se ter uma massa arenosa.
Adicionar a quantidade de água fria necessária para fazer uma bola de massa.
Colocar a massa debaixo da película aderente e arrefecer durante uma hora.
Para a opção clássica de pastelaria doce:
Colocar a amêndoa em pó, açúcar em pó, dentro da vagem de baunilha, farinha, sal e manteiga na tigela da batedeira.
Misturar a mistura para incorporar a manteiga com o “k” do processador de alimentos. Ou à mão!
Adicione o ovo batido com antecedência e misture apenas para o incorporar, mas não mais!
Colocar a massa debaixo da película aderente e arrefecer durante uma hora.
Misturar os ovos, manteiga derretida e açúcar.
Acrescentar a raspa dos três limões e o seu sumo.
Estender a massa (qualquer que seja a massa que escolher) sobre uma superfície de trabalho ligeiramente enfarinhada ou papel de cozinha.
Escurecer um círculo de 26cm ou dois círculos de 18 ou 19cm em papel vegetal.
Picar o fundo da pastelaria.
Cozer a massa em branco usando o seu método preferido. Aqui, o método do saco de farinha… Ver as receitas de tarteletes para explicações.
Cozer a 180°C durante 10 minutos e depois retirar o saco. Cozer durante mais 10 minutos, empurrando o fundo da massa de volta para dentro.
Acrescentar o creme de limão e cozer durante 30 a 40 minutos.
O creme deve estar a ferver e a começar a dourar na superfície, um pouco como um crème brûlée.
Deixar arrefecer sobre um suporte de arame.
