بعد أن نشرت عن عجينة البيجا، وهي طريقة ما قبل التخمير، إليكم مثالاً لإحدى البيتزا المفضلة لدي، مع الجورجونزولا والجوز على قاعدة كريمة فرايشي بيضاء. بالطبع، هذه مجرد واحدة من العديد من الوصفات الممكنة. ولكنه سيمنحك الفرصة لاختبار البيجا، مما يعطي نتائج ممتازة!

السميد الناعم
1 برطمان (250 غ) كريمة مزدوجة (250 غ)
8 شرائح كبيرة من لحم الخنزير المجفف (سيرانو على سبيل المثال)
300 غ من جبن الغورغونزولا
الجرجير، والجوز، وزيت الزيتون
ابدأ بتحضير عجينة البيتزا في اليوم السابق. يمكنك العثور على طريقة بيجا الخاصة بي هنا. تُقسم العجينة إلى 4 قطع كما هو موضح في وصفتي. تُدهن كل عجينة بالقليل من السميد الناعم الذي سيضفي ملمسًا رائعًا على البيتزا النهائية. لا تستخدم الأسطوانة لفرد الخليط، بل استخدم يديك للاحتفاظ بالهواء الناتج عن التخمير الأخير.
يُسكب ما يعادل ملعقتين كبيرتين من الكريم فرايش فوق المعجنات، ثم توضع شريحتان من لحم الخنزير المقدد المقطّع إلى قطع لتغطية السطح.
تُرش قطع من جبنة الغورغونزولا (حوالي 75 غرام لكل بيتزا) وتُتبّل حسب الرغبة. يُرش بزيت الزيتون.
نقدم لك فرن الأوني الرائع الذي يعمل بالخشب والغاز. يجب أن يكون الفرن على درجة حرارة مناسبة (أهدف إلى 430 درجة مئوية). هذا هو الجزء الأصعب: التحكم في درجة حرارة الفرن الصغير الذي يعمل بالحطب. هناك دائماً خيار الغاز لانتظامه!
عندما يجهز الفرن، ضع البيتزا في الفرن وراقبها عن كثب.
بمجرد إخراجها من الفرن، يُرشّ عليها أوراق الجرجير والجوز (لا أضع الجوز في الفرن لأنه يحترق بسرعة كبيرة!). تذوق دون انتظار!
Commencez par préparer la pâte à pizza la veille. Je vous donne ma méthode pour la biga par ici. Divisez la pâte en 4 pâtons comme expliquée dans ma recette. Étalez chaque pâton dans un peu de semoule fin qui ajoutera une merveilleuse texture à la pizza finale. N’étalez pas au rouleau, mais à la main pour conservez l’air de la dernière fermentation.Mettez l’équivalent de deux cuillerées à soupe de crème fraiche sur la pâte puis mettez 2 tranches de jambon sec, coupées en morceaux pour couvrir la surface.
Parsemez de morceaux de gorgonzola (environ 75g par pizza), puis poivrez à votre goût. Versez également un filet d’huile d’olive.
Voici le fantastique four Ooni, qui fonctionne à bois et également au gaz. Il faut que le four soit à la bonne température (pour moi je vise les 430°C). C’est le plus difficile au final : gérer la température d’un petit four à bois. Il y a toujours l’option gaz pour sa régularité !
Quand le four est prêt, enfournez la pizza et surveillez de près.
À la sortie du four, parsemez de feuille de roquette et de noix (je ne mets pas les noix au four, car elles brûlent très vite !). Dégustez sans attendre !
