لقد صنعت الكثير من bruschetta لكتابي “سأقوم بعمل لدغة واحدة فقط” الذي نشرته Flammarion ، لكنني لم أقم بعد بنشره في مدونة الطبخ الخاصة بي. لقد قمت بطهيها للضيوف مؤخرًا ، وأحبهم الجميع. لذلك أشارككم وصفتي البسيطة! إنه مقرمش ، جيد ومطمئن ، كل ما أحبه!
وصفة لأربعة أشخاص (12 بروشيتا)
750 جرام فطر
3 فصوص ثوم
50 مل من النبيذ الأبيض
200 مل كامل الدسم
75 جرام جبن بارميزان مبشور
70 جرام صنوبر
12 شريحة خبز
زيت الزيتون
ملح فلفل
ابدأ بتحضير الفطر. لا تتردد في خلط الفطر ولا تأخذ الزر فقط. خذ shiitakes على سبيل المثال! اقطع الذيل جزئيًا ثم قطعه إلى قطع دون غسله.
نضعهم في مقلاة مع ملعقتين كبيرتين من زيت الزيتون وفصوص الثوم المقشرة والمهروسة.
يُطهى لمدة 20 دقيقة على نار متوسطة مع التحريك بانتظام. يُسكب النبيذ الأبيض ويُطهى حتى يتبخر.
ثم نسكب الكريمة الكاملة.
يرش جبنة البارميزان ويطهى حتى يتماسك.
توضع جانباً وفي غضون ذلك ، نخب الصنوبر في المقلاة.
نخب شرائح الخبز.
عندما يصبح كل شيء جاهزًا ، اسكب القليل من زيت الزيتون على الخبز المحمص.
تُسكب ملعقتان كبيرتان من الفطر فوق الخبز ، ويُرش القليل من البارميزان ، ويُضاف الصنوبر ، والفلفل حسب الرغبة ، ويُسكب القليل من زيت الزيتون. لا تتردد في إضافة القليل من الثوم المعمر وتقديمه على الفور.
Commencez par préparer les champignons. N'hésitez pas à mélanger les champignons et ne prenez pas que des champignons de Paris. Prenez des shiitakés par exemple ! Coupez partiellement la queue puis coupez-les en morceaux sans les laver.
Mettez-les dans une poêle avec deux cuillerées à soupe d'huile d'olive, et les gousses d'ail épluchées et écrasées au presse-ail.
Laissez cuire 20 minutes sur feu modéré en mélangeant régulièrement. Versez le vin blanc et faites cuire jusqu'à ce qu'il s'évapore. Versez alors la crème entière. Saupoudrez de parmesan puis laissez cuire jusqu'à ce que le tout épaississe.
Mettez de côté et pendant ce temps, faites griller les pignons à la poêle. Faites griller les tranches de pain. Quand le tout est prêt, versez un peu d'huile d'olive sur le pain grillé.
Versez deux cuillerées à soupe de champignons sur le pain, saupoudrez d'un peu de parmesan, ajoutez les pignons, poivrez à votre goût et arrosez d'un peu d'huile d'olive. N'hésitez pas à y mettre un peu de ciboulette pusi servez sans attendre.
