ها هي وصفة أكرا ، هذه الكعك الصغير اللذيذ من الهند الغربية ، غالبًا ما يكون مصحوبًا بزارع أو لكمة! بالطبع ، عليك تكييفها مع ذوق الجميع ، وتوابلها أكثر أو أقل وتنويع مكوناتها الأساسية ، لصنع أكرا السلطعون أو الروبيان!
وصفة لـ “أكراس”:
– 600 جرام من سمك القد (أو سمك القد المملح)
– زعتر وغار
-320 جرام طحين
– 15 سنتيلتر ماء
– 1 علبة من البيكينغ باودر
-3 بيضات
-2 بصل
-4 فص ثوم
-2 طائر الفلفل المصنف
-2 سم زنجبيل مبشور
– حفنة من البقدونس ذو الأوراق المسطحة
– حفنة من الثوم المعمر
-1/2 ملعقة صغيرة سكر
– قشر 1/2 ليمون كافير (اختياري!)
-2 رشة جيدة من مسحوق الفلفل الحار
– ماء كافي…
ابدأ ب تحلية يجب أن يكون السمك طوال الليل (12 ساعة على الأقل!) في المياه العذبة للتغيير بشكل منتظم.
في اليوم التالي (أو في المساء!) ، ضعي السمك في قدر في ماء بارد مع الزعتر وورقة الغار. يُطهى المزيج على نار خفيفة ويُطفئ النار في أسرع وقت الغليان. ثم يُترك ليُسلق لمدة 10 دقائق في الماء.
أثناء سلق السمك ، ضع الدقيق والبيكنج باودر والبيض في تيرين.
ابدئي بالخلط ثم أضيفي الماء. خفقت بقوة حتى يتم القضاء الكتل. أضف القرنفل سحق الثوم.
الزنجبيل…
يقطع كلا البصل إلى قطع صغيرة.
فلفل الطيور (المصنف بقفازات لاتكس !!!) والأعشاب المفرومة جيدًا. أضف أيضًا السكر ومسحوق الفلفل الحار وقشر الليمون الكفيري.
عندما تنتهي السمكة من السلق ، أزل الماء وتأكد من عدم وجود عظام!
قم بتفتيت السمك باليد أو بالشوكة (لكن ليس في الخلاط !!).
أضفه للعجين. أضف الماء إذا لزم الأمر بحيث يكون الخليط متماسكًا تقريبًا (أعني تقريبًا !!). تخلط جيدا و تخفق بالشوكة.
سخني الزيت في مقلاة (عملي لأنه يمكنك طهي الكثير من أكرا في نفس الوقت!).
لعمل أكرا ، خذ ملعقة صغيرة من العجين.
ونسكبها في الزيت الساخن جدا بمساعدة ملعقة صغيرة ثانية.
قم بنفس العملية لجميع العجين ، مع الحرص على عدم غزو الووك باستخدام أكرا!
اتركيه للطهي وقلب أكرا لطهيها من جميع الجوانب!
إنها جاهزة عندما تصبح ذهبية اللون! دعهم يستنزفون على ورق ماص.
