هذه هي رحلة هونغ كونغ للطهي! أقدم لكم بسرعة بعض التخصصات التي أحب أن أتذوقها كثيرًا عندما أذهب إلى هناك! سوف تكتشف الديم سامز ، وحساء النودلز اللذيذ! سأقدم لك أيضًا مطعم “Din Tai Fung” ، وهو في الواقع سلسلة مطاعم (إنه المطعم الوحيد الذي أحبه !!) الذي يصنع “زيا لونغ باو” اللذيذ!
أنا هنا هذه المرة في هونغ كونغ. هناك الكثير من الأشياء التي يجب اكتشافها من وجهة نظر الطهي ، بحيث يستحيل تقديم كل شيء هنا! لقد أجبرت نفسي أيضًا على فرض رقابة على بعض الصور ، لأن هناك بعض الأشياء الخاصة إلى حد ما في الصين!
للبدء ، غادرت على الفور لتناول العشاء في “Din Tai Fung”. اكتشفت هذه السلسلة لأول مرة في سنغافورة ، لكنها بدأت بالفعل في تايبيه. وقد نال جوائز وعلقته “نيويورك تايمز” على أنه أفضل مطعم ..
كل شيء نظيف حقًا ويسعدني أن نرى الطهاة يعدون الرافيولي الصغير.
كل شخص لديه مهمته ، أحدهما يلف العجين (يتم تحضيره في الموقع!) والآخر يضع الحشوة بالداخل. أ الشركة الثالثة ببراعة مبهرة الرافيولي الصغير!
ثم يتم وضعها في سلة باخرة من الخيزران لتصل بعد ذلك إلى طاولتنا !!
ها هي النتيجة! رافيولي صغير مثالي مع عجينة رقيقة جدًا (لا أفهم لأنها لا تنتفخ حتى عند طهيها !!
يجب تذوقها بحذر لأنها تحتوي على عصير لذيذ! يتم طهي لحم الخنزير إلى حد الكمال! يتم تناولها مع القليل من صلصة الصويا وزيت الفلفل الحار والقليل من الزنجبيل الطازج المبشور!
ولكن هناك تخصصات أخرى ، مثل هذه الرافيولي الصغيرة مع الثوم المعمر والفطر! العجين مازال رقيقه و ليس دهني !!
هونغ كونغ مدينة رائعة حقًا! ولا يزال التأثير الإنجليزي محسوسًا!
في صباح اليوم التالي (أحد أيام الأحد) توجه إلى جزيرة هونج كونج للذهاب لجعل Yum Cha جديرًا بهذا الاسم !! إنها في الواقع وجبة كانتونية والتي تعني حرفياً “شرب الشاي”. وتتكون من شرب شاي الياسمين وتناول كميات صغيرة من الديمم. وديم سامز “قطع القلوب الصغيرة” هي أطباق صغيرة تتراوح من أقدام الدجاج إلى رافيولي الروبيان اللذيذ!
في يوم الأحد يوم الأحد ، ذهبت إلى “Luk Yu Tea House” ، أحد أقدم المقاهي في هونغ كونغ ، والذي تم افتتاحه في عام 1933.
تمر النادلات بالأطباق وتوزعن ما طلبته!
يجب أن أخجل من وجبتي وحدي ، لكن ليس حتى !!
مع هذه القضمات اللذيذة من القريدس المغطاة … عجينة مصنوعة من لحم الجمبري!
والقليل “سيو ماي” مع لحم الخنزير والروبيان!
و “هار جاو” مع عجينة شفافة وحشو جمبري رائع!
تجولت لاحقًا في أحد الأسواق العديدة التي توفرها هونغ كونغ!
مع البط المطلي …
تجار السمك …
الدوريان الشهير فاكهة شائكة خطر التعامل معها ولها رائحة خاصة جدا!
يوجد العديد من مطاعم الشوارع الصغيرة وأحيانًا لا تتردد في طلب أطباق حساء المعكرونة أو النودلز المقلية!
وهنا حساء الرافيولي المعكرونة “فاز بالطن”! إنها قاعدة من مرق الدجاج مع النودلز التي يمكن أن تكون أرز أو بيض وزلابية مليئة بلحم الخنزير أو الروبيان!
كانت الرافيولي مثالية مع الكثير من الجمبري الطازج والمقرمش! مغموسة في صلصة الفلفل الحار ، فهي لذيذة!
هنا سلسلة متاجر موجودة في جميع أنحاء جنوب شرق آسيا ، “Bee Cheng Hiang”.
يقدم حصريًا قطعًا من اللحم الطري جدًا والحلو المشوي على الفحم. إنه حقًا جيد جدًا لكنني لم أفهم بعد تحت أي ظروف وماذا يؤكل …
تقدم هونغ كونغ (مثل بقية الصين) مجموعة كاملة من الأشياء التي لم نعرفها من قبل ، مثل بلح البحر المجفف!
أو قذائف أخرى … أعترف أنني لا أعرف المزيد عن استخدامها!
تستخدم العديد من المنتجات أيضًا في الطب الصيني. لكن من الصحيح أن الفضول يفوق الرغبة في شرائها بالفعل!
وفي بعض الحالات نتساءل ما إذا كانت نباتية أم حيوانية !! في هذه الحالة يتم تجفيف الجذور أخيرًا …!
إلى جانب هونغ كونغ ، هناكالكثير من الأشياء التي تجف !! مثل تلك الدجاجات المسكينة …
هذه السمكة الصغيرة … باختصار ، كل شيء مباح!
يوجد في هونغ كونغ مجموعة متنوعة من الأطعمة التي لم أستطع الذهاب إلى أبعد من ذلك !! انظر فقط إلى عدد المطاعم الموجودة في هذا الزقاق الصغير. لكن رحلتي إلى الصين بدأت للتو! بكين ستصل قريبا !!
