لماذا نضع وصفة لعجينة اللوز (أو مرزبانية ، مرزبانية) ، في حين أنها بسيطة للغاية ؟؟ لأن هذه الوصفة هي وصفة مرزبانية محضرة ساخنة. لا تحتوي على بياض البيض. لماذا تخبرني؟ لأنه في معظم الأحيان بهذه الطريقة يقوم المحترفون بإعداد المرزبانية. والمصلحة الرئيسية لهذا المعجون هي الحفاظ على هذه العجينة لفترة طويلة ، لأنه لا يوجد لون أبيض. تستخدم لتزيين الشوكولاتة والفواكه المقنعة … إذا كنت تخطط لتناول المرزبانية الخاصة بك على الفور ، فمن الواضح أنه يمكنك اللجوء إلى المرزبانية المعدة على البارد (باللون الأبيض) ، ولكن إذا كنت ترغب في جعل المواد في العجين ، أو تزيين الشوكولاتة أو ببساطة صنع كمية معينة للاحتفاظ بها فهذه الوصفة مثالية! لكن لا تقلق انا ايضا اضع نسب الوصفة باردا …
وصفة مرزبانية باردة (بدون صورة):
– 200 جرام سكر بودرة
– 200 جرام من مسحوق اللوز
– 40 جم من الجلوكوز اللامائي (يمكن العثور عليه في الصيدليات ويمنع العجين من الجفاف بسرعة كبيرة ويمنحه نعومة)
-80 إلى 110 جم من بياض البيض
اخلطي السكر البودرة واللوز المطحون والجلوكوز اللامائي. أضيفي بياض البيض تدريجيًا حتى يصبح القوام المطلوب!
لماذا اسم “الحلواني” مرزبانية؟ إنها ببساطة تسمية لتحديد كمية اللوز مقارنة بالسكر. يوجد المرزباني المتفوق (66٪ لوز) ، إضافي (50٪) ، حلواني (33٪) وشائع (25٪). اخترت “الحلواني” لسهولة استخدامه (خاصة خطوة الأسطوانة) وفترة صلاحيته الطويلة. ولا أرى فرقًا كبيرًا مع الإضافات من حيث الذوق!
وصفة مرزبانية ساخنة:
– 120 جرام من اللوز المقشر (أو مسحوق اللوز)
– 200 جرام سكر
– 40 جرام شراب الجلوكوز
– 80 جرام ماء
– تلوين مسحوق (اختياري)
ابدأ بطحن اللوز المقشر.
عليك فقط تقليصها إلى مسحوق أدق مما في الصورة.
إذا أردت تلوين العجينة ، فقط ضعي طرف سكين من بودرة التلوين في مسحوق اللوز واخلطيهم جيداً …
ضع السكر وشراب الجلوكوز والماء في قدر على نار متوسطة.
اجلب كل شيء إلى 116 درجة مئوية.
صب الشراب فوق اللوز المطحون.
واخلطي جيداً خصوصاً إذا كان هناك تلوين في مطحون اللوز!
اسكبيها على حصيرة من الرخام أو السيليكون واتركيها تبرد تمامًا .
العجين غير جاهز بعد. عندما يبرد ، يتصلب السكر ويكون الاتساق محببًا.
توصي بعض الوصفات أو الكتب بإعادة وضعها في المطحنة / الخلاط. أرجوك لا!! لقد جربت بالفعل كل شيء (لقد صنعت 4 وصفات لتحقيق ذلك أخيرًا ، حيث يكون التبسيط أمرًا معقدًا في بعض الأحيان!). سوف يقوم الخلاط بسحق اللوز بشكل مكثف وقد يتسبب في إطلاق الزيت. أنا أستخدم دبوسًا (من الأفضل أن يكون سكرًا معدنيًا أو بكرة نوجا!). يكفي سحق العجين بقوة بالمسمار.
حتى تلتصق العجينة بالمسمار وتصبح ناعمة الملمس.
أخرج العجين من الشوبك ثم أعد تشكيل العجينة يدويًا مثل عجينة الخبز لمدة دقيقتين أو 3 دقائق.
