Porquê colocar uma receita de maçapão quando é tão simples? Porque esta receita é para marzipan preparado quente. Não contém clara de ovo. Porquê fazê-lo, pode perguntar? Porque esta é a forma como a maioria dos profissionais prepara o maçapão. E a principal vantagem disto é o longo prazo de conservação da massa, uma vez que não há branco. Pode ser utilizado para guarnecer chocolates, fruta disfarçada, etc. Se está a planear comer o seu maçapão imediatamente, pode obviamente virar-se para o maçapão preparado frio (com branco), mas se quiser fazer coisas com maçapão, ou decorar chocolates, ou simplesmente fazer uma certa quantidade para guardar, então esta receita é ideal! Mas não se preocupe, eu também ponho as proporções da receita fria…
Receita de maçapão frio (sem foto):
-200g de açúcar de confeiteiro
-200g de pó de amêndoa
-40g de glicose anidra (esta pode ser encontrada nas farmácias e evita que a massa seque demasiado depressa e lhe dê maciez)
-80 a 110g de clara de ovo
Misturar o açúcar de confeiteiro, amêndoa em pó e glucose anidra. Adicionar gradualmente a clara de ovo até se atingir a consistência desejada!
Porque é que o maçapão se chama “confiseur”? É simplesmente um nome para a quantidade de amêndoa para a proporção de açúcar. Há pasta de amêndoa superior (66%), extra (50%), de confeitaria (33%) e comum (25%). Escolhi o “confiseur” pela sua simplicidade de utilização (especialmente o degrau rolante) e a sua longa duração de conservação. E não vejo muita diferença com o extra no gosto!
Receita de maçapão quente:
-120g de amêndoas branqueadas (ou pó de amêndoa)
-200g de açúcar
-40g de xarope de glucose
-80g de água
-powdered dye (opcional)
Comece por esmagar as amêndoas branqueadas.
Basta moê-las num pó mais fino do que o mostrado na fotografia.
Se quiser colorir a massa, basta colocar a ponta de uma faca de coloração em pó na amêndoa em pó e misturar bem…
Colocar o açúcar, o xarope de glucose e a água numa caçarola em lume moderado.
Trazer para 116°C.
Verter o xarope sobre o pó de amêndoa.
E misture bem, especialmente se houver corante no pó de amêndoa!
Verter sobre um mármore ou tapete de silício e deixar arrefecer completamente.
A massa ainda não está pronta. À medida que arrefece, o açúcar solidifica-se e a consistência torna-se granular.
Algumas receitas ou livros dizem para o colocar no moedor/misturador. De modo algum! Já tentei de tudo (fiz 4 receitas para finalmente chegar a isto, o que mostra como pode ser complicado simplificar!) O misturador triturará as amêndoas com demasiada intensidade e poderá fazê-las perder o seu óleo. Utilizo um rolo de laminagem (um rolo de açúcar metálico ou de nougat seria melhor!). Basta pressionar a massa com força com um rolo.
Até que a massa se cola ao rolo e é macia ao toque.
Retirar a massa do rolo e trabalhar a massa à mão como uma massa de pão durante 2 ou 3 minutos.
