¿Por qué poner una receta de mazapán cuando es tan sencillo? Porque esta receta es para mazapán preparado en caliente. No contiene clara de huevo. ¿Por qué hacerlo, se preguntarán? Porque esta es la forma en que la mayoría de los profesionales preparan el mazapán. Y la principal ventaja de esto es la larga vida útil de la masa, ya que no hay blanco. Se puede utilizar para adornar chocolates, disfrazar frutas, etc. Si piensa consumir su mazapán directamente, evidentemente puede recurrir al mazapán preparado en frío (con blanco), pero si quiere hacer cosas con mazapán, o rellenar bombones o simplemente hacer una cierta cantidad para guardar, ¡esta receta es ideal! Pero no te preocupes, también pongo las proporciones de la receta fría…
Receta de mazapán frío (sin foto):
-200 g de azúcar glas
-200g de polvo de almendra
-40g de glucosa anhidra (se puede encontrar en las farmacias y evita que la masa se seque demasiado rápido y le da suavidad)
-80 a 110 g de clara de huevo
Mezclar el azúcar glas, la almendra en polvo y la glucosa anhidra. Añadir poco a poco la clara de huevo hasta alcanzar la consistencia deseada.
¿Por qué el mazapán se llama «confiseur»? Es simplemente un nombre para la proporción de almendra y azúcar. Hay pasta de almendra superior (66% de almendras), extra (50%), de repostería (33%) y común (25%). Elegí el «confiseur» por su sencillez de uso (sobre todo el paso del rodillo) y su larga vida útil. ¡Y no veo mucha diferencia con el extra en el sabor!
Receta de mazapán caliente:
-120 g de almendras blanqueadas (o almendras en polvo)
-200g de azúcar
-40g de jarabe de glucosa
-80g de agua
-Tinte en polvo (opcional)
Comience por triturar las almendras blanqueadas.
Sólo hay que molerlos hasta obtener un polvo más fino que el que se muestra en la foto.
Si quieres colorear la masa, simplemente pon la punta de un cuchillo de colorante en polvo en el polvo de almendra y mezcla bien…
Poner el azúcar, el jarabe de glucosa y el agua en un cazo a fuego moderado.
Llevar a 116°C.
Verter el jarabe sobre el polvo de almendra.
Y mezclar bien, sobre todo si hay colorante en el polvo de almendra.
Verter en un mármol o tapete de silicona y dejar enfriar completamente.
La masa aún no está lista. Al enfriarse, el azúcar se solidifica y la consistencia se vuelve granular.
Algunas recetas o libros dicen que hay que ponerlo en la picadora/mezcladora. ¡¡Sobretodo no!! Ya he probado de todo (he hecho 4 recetas para llegar finalmente a esto, ¡lo que demuestra lo complicado que puede ser simplificar!) La batidora triturará las almendras con demasiada intensidad y puede hacer que pierdan su aceite. Utilizo un rodillo (¡un rodillo de metal para azúcar o turrón sería lo mejor!). Basta con presionar la masa con fuerza con un rodillo.
Hasta que la masa se pegue al rodillo y esté suave al tacto.
Retirar la masa del rodillo y trabajarla a mano como si fuera una masa de pan durante 2 o 3 minutos.
La masa ya está lista.
¡Sólo tienes que utilizarlo para la receta que quieras!
