بعد نجاح Assassin ، الكعكة التي طورتها على أساس الكراميل والشوكولاتة (والتي تعطي ملمسًا رائعًا إذا استخدمت قالب الحجم المناسب!) ، قلت لنفسي أن ganache للماكرون على نفس المبدأ سيكون مثيرًا للاهتمام. لذلك حاولت أن أرى والمعكرون لذيذ حقًا: غاناش مصنوع من الكراميل المملح الساخن يسكب على شوكولاتة الحليب. الملمس مطاطي ويكاد يشبه الكرامبار الناعم! لذلك لمقالي الخاص بك!
وصفة حلوى الماكرون بالشوكولاتة والكراميل (لثلاثين قطعة معكرون مليئة بالكراميل):
ضعي السكر والملح وشراب الجلوكوز في قدر على نار متوسطة مع رشة من الماء.
احصل على كراميل قوي إلى حد ما لأن الكريمة ستخففها. سخني الكريمة في الميكروويف لتجنب تناثرها (ستجعل الكريمة الباردة الكراميل مجنونًا!). يضاف الكريم ببطء مع التحريك باستمرار.
قم بطهي الكريمة مرة أخرى لإذابة السكر.
يُسكب الكراميل (الذي يُسمح له بالانخفاض إلى 100 درجة مئوية) فوق شوكولاتة الحليب.
اتركيه لمدة ثلاثين ثانية حتى تذوب الشوكولاتة.
ثم تخلط بلطف بملعقة.
صوِّر الغاناش عند ملامسته (مع فيلم مطاطي مباشرة على الغاناش) ثم اتركه ليبرد تماما. عندما يكون الغاناش ناعمًا (غير سائل) ، ضعه في جيب مزود بفوهة 12 مم.
املأ الأصداف بالحلويات اثنين في اثنين
كالعادة بالنسبة للماكرون ، ضعيهم في صندوق محكم الإغلاق لمدة 24 ساعة على الأقل في الثلاجة قبل التهامهم!
