مع رحلة الطهي إلى لوزان ، كان علي أن أضع وصفة للفوندو السويسري. أقدم لكم هنا وصفة عالمية ، مع العلم أنه يمكنك اختيار نوع الجبن المراد إضافته في هذه الوصفة. لذلك سيكون لديك إمكانية صنع فوندو فودواز أو فريبورجواز أو هاف-هاف أو نوشاتيلواز أو فوندو سويسري المركزي.
-800 جرام جبن -350 مل من النبيذ الأبيض الجاف – 1 فص ثوم -3 إلى 4 ملاعق صغيرة من نشا البطاطس (أو دقيق الذرة) – الفلفل وجوزة الطيب -1 زجاج مشروب كحولي صغير (20 مل) من الكيرش (غير فاخر !!) – رشة من عصير الليمون أو طرف سكين من كريم التارتار
تحضير الجبن ووزنها بدون القشور. في الليلة التي صنعت فيها الفوندو ، كان لدي Gruyère و Vacherin Fribourgeois ، لذلك كان نصف فوندو ونصف …
قشر فص الثوم وافركه في قاع الكأس وعلى جانبه.
قم بإذابة نشا الذرة (أو نشا البطاطس) في القليل من النبيذ الأبيض المأخوذ من 350 مل.
ابشر الجبن وضعه في مقلاة (لم يكن لدي أي شيء في متناول اليد ، لكنني صنعته في قدر نحاسي ثقيل القاع!). على نار خفيفة ، أضيفي النبيذ الأبيض الجاف على الفور.
صب النشا السائل في وعاء الفوندو.
اتركي وأضيفي عصير الليمون (ما يعادل ملعقة كبيرة) أو طرف سكين جيد من كريم التارتار.
نصيحة برنارد : الليمون أو كريم التارتار حامضي ويساعد على استحلاب الفوندو. بشكل ملموس ، فإن المواد الدهنية في الجبن (وهناك الكثير منها !!) لا تريد حقًا أن تختلط مع النبيذ الأبيض (ماء + كحول). ستؤدي إضافة هذه الحموضة إلى تفاعل للحصول على فوندو متجانس تمامًا! ولن يكون هناك طعم ليمون!

ليخدم فورا في التمركز وعاء الفوندو فوق اللهب لإبقائه دافئًا. اغمس قطع الخبز من اليوم السابق (والتي لن تذوب على الفور في الفوندو الساخن).
