هذه هي الطريقة الثالثة لكبد الأوز. أخيرًا ، هذه ليست الطريقة الرسمية الثالثة ، مُجَرّد الثالث في مدونتي! ربما يكون أبسط. يعطي نتيجة جيدة مثل الطرق الأخرى ويحافظ على مظهر الكبد كما يطبخ في شكله الطبيعي.

ملح وفلفل من الداخل والخارج من فوا جرا ثم ينقع بخفة من الكحول المختار.
اختر غلافًا مطاطيًا يتحمل درجات الحرارة العالية (البال جيد جدًا!). استعادة الشكل الطبيعي لكبد الإوز.
لفها بسخاء في فيلم مطاطي. أفعل ذلك 4 مرات في اتجاه واحد و 4 مرات في الاتجاه الآخر.
اتركيه للراحة طوال الليل في الثلاجة.
في اليوم التالي ، أخرجه قبل ساعتين من الطهي حتى يكون في درجة حرارة الغرفة. ضعها في سلة باخرة.
ضعه فوق ماء مغلي (بخار هكذا) لمدة 8 دقائق لكبدة 500 جرام أو 10 دقائق لكبد 700 جرام في اتجاه واحد ثم اقلبه واتركه يطهى لمدة 8 أو 10 دقائق أخرى. لذلك فهي تطبخ بهذه الطريقة لمدة 16 أو 20 دقيقة حسب وزنها.
قم بإزالة السلة العلوية من الماء المغلي. دع الكبد يبرد إلى درجة حرارة الغرفة.
ثم قم بتخزين الكبد في مكان بارد في عبوته لمدة 3 أيام على الأقل قبل فتحه.
يمكنك تجميده بعد ثلاثة أيام! يتجمد فطائر فوا جرا مطبوخة بشكل أفضل من الخام!
