فطيرة السكر هي واحدة من تخصصات كيبيك العديدة. ومع ذلك ، هناك إصدارات أخرى من فطيرة السكر في شمال فرنسا وبلجيكا. العجينة مقرمشة وبداخلها غنية وناعمة وحلوة … قشدة ، شجيرة بنية (التي يسميها أصدقاؤنا في كيبيك السكر البني) وهذا كل شيء تقريبًا! فرحة حقيقية خاصة عندما تبدأ في البرودة!
وصفة فطيرة السكر كيبيك:
عجينة حلوة:
– 210 جرام طحين
– 125 جرام زبدة باردة غير مملحة على شكل قطع
– 25 غ من مسحوق اللوز
– 50 جرام بيض مخفوق
-1 رشة ملح
– 35 جرام سكر بودرة
كريم السكر:
– 300 جرام شجر بني
-250 جرام كريم 35٪ (أو 125 جرام كريم 30٪ كلاسيكي و 125 جرام كريم إيزيني 40٪)
– 60 جرام حليب
– 60 جرام طحين
تحضير المعجنات الحلوة:
نضع اللوز المطحون والسكر البودرة والدقيق والملح والزبدة في قطع في وعاء العجن.
صنفرة الخليط لدمج الزبدة بحرف “k” الخاص بالروبوت. أو باليد!
أضف البيض المخفوق مقدمًا واخلطه فقط لمزجها ، ولكن ليس أكثر!
نضع كرة من العجين على ورق زبدة ونضع عليها ورقة ثانية. يوزع بالأسطوانة بدون إضافة الدقيق ، كل شيء يبقى نظيفًا !!
اصنعي حلقة دائرية قطرها 18 سم وارتفاعها 2.5 سم.
ونقطع العجينة الزائدة.
لتحضير كريمة السكر ، ضعي الطحين والفرج البني في قدر.
اخلطي ثم أضيفي الحليب والقشدة.
يُسخن الفرن على حرارة 180 درجة مئوية.
ضعي كريمة السكر في قدر على نار خفيفة وقلبي باستمرار بمضرب ، مع الحرص على عدم ترك القاع يحترق.
عندما يغلي الكريم (سوف يثخن) يرفع عن النار.
ونسكب فوق قاعدة المعجنات النيئة الحلوة.
نضعها في الفرن لمدة 30 دقيقة ، تراقب الطبخ وتتكيف مع فرنك …
يجب أن تكون الفطيرة ذهبية اللون حول حافة العجين.
ثم تنكمش الفطيرة. اتركه ليبرد لكن لا تضعه في الثلاجة!
استمتع بالفطيرة في درجة حرارة الغرفة كما هي … إنها خطيئة حقيقية لكنها جيدة !!
