لقد تذوقت طبق فوا جرا رافيولي عدة مرات في مطعم في باريس ، Comptoir de la Gastronomie ، شارع مونمارتر مقابل مورا. أذهب إلى هناك في مناسبات استثنائية إلى حد ما مع الأصدقاء الذين يأتون من الخارج لزيارتي. من بين أشياء أخرى ، هناك رافيولي من فطائر فوا جرا الإلهية. السر محفوظ جيدا أقدم لكم هنا وصفتي بعد عدة اختبارات. لا يحب الجميع فطائر فوا جرا الساخنة ، لكنني شخصياً أشعر بالجنون في وجودها! إليكم هذه الرافيولي الفاخرة المحشوة بمكعبات من فطائر فوا جرا تيرين ومغطاة بالكمأة والعسل وكريم الماسكاربوني … ربما تكون قد اكتشفت الخبز المحمص مع زبدة الكمأة السوداء ، وهنا أستخدم زبدة الكمأة التي أصنعها في الشتاء وأقوم بتجميدها لبقية العام.
وصفات من رافيول فطائر فوا جرا لـ 4 أشخاص:
– عبوة واحدة من غلاف فطيرة باللحم (تحتاج 40 ورقة لـ 20 رافيولي)
– فطيرة فوا جرا منزلية نصف مطبوخة ( الطريقة 1 أو 2 أو 3)
تحضير فطائر فوا جرا محلية الصنع عن طريق اختيار طريقة الطهي. بشكل عام ، أقوم دائمًا بتجميد فطائر فوا جرا مطبوخة للحصول على نسخة احتياطية فقط في حالة! قطع كبد الأوز إلى مكعبات 2 سم.
رتبي أغلفة فطيرة باللحم على سطح العمل. بلل ورقة فطيرة باللحم (بفرشاة أو بأصابعك) ووضع مكعب من كبد الأوز في الوسط.
الصق ورقة فطيرة باللصق على الورقة السابقة وختمها جيدًا. قطعيها بقطاعة بسكويت للحصول على رافيولي دائري.
افعل نفس الشيء مع جميع أنواع الرافيولي. يتطلب 4 أو 5 رافيولي للشخص الواحد.
في وقت الخدمة ، سيتم تنفيذ كل شيء بسرعة كبيرة ، لأن الرافيولي يطبخ بسرعة كبيرة.
ها هو جرة الكمأ المكسور. يوجد دائمًا عصير بالداخل وهذا مثالي لهذه الوصفة.
تحضير الصلصة. ضعي عصير الكمأة (الموجود في البرطمان) وزبدة الكمأة والعسل في قدر.
نذوب كل شيء ثم نضيف الماسكربون وكريمة الخفق. يخلط جيدا ويطهى إلى عن على ثخن الصلصة.
اسلقي مرق الدجاج مع ملعقة صغيرة من العسل. يُملح جيدًا ثم يُضاف الرافيولي.
اطبخهم لمدة 50 ثانية …!
صفيهم وضعيهم على الأطباق. رشي كريمة الكمأة.
ثم أضف الكمأ المكسور في برطمان واستمتع به على الفور!
