إليكم وصفة جديدة من أصدقائي الأعزاء ميريام ولالة فاطمة وثريا! لقد أعدنا هذه الوصفة في مايو الماضي خلال رحلتي الطهوية إلى الدار البيضاء والرباط (انظر رحلة الطهي هنا! ). وصفة مغربية لذيذة يمكن أن تكون مرافقة للكسكس. يوجد حتى كسكس مصنوع فقط من السميد والطفية (الكسكس الطفي). أنا لا أخبركم بالرائحة الرائعة التي تعطيها هذه الوصفة للبصل بالكراميل مع القرفة والزبيب. فرحة حقيقية وتعذيب حقيقي إذا حاولت مقاومته! لأنه يمكننا تخيل مرافقته لأطباق أخرى!
وصفة الطفاية:
-1-1.2 كجم بصل أبيض
– 3 أعواد قرفة
– ملح ، فلفل أسود
– مكعب من الزعفران (أو عدد قليل من مدقات الزعفران أو مسحوق الزعفران المزيف)
– 50 جرام زبدة
-3 ملاعق كبيرة زيت
-50 إلى 100 جرام من الزبيب الذهبي (حسب ذوق الجميع)
يخلط جيدا ويطهى مع التحريك من حين لآخر لمنع البصل من الاحتراق.
عندما ينضج البصل (لين الملمس) أضيفي الزبيب ومسحوق القرفة.
نضيف السكر البودرة ونزيد الحرارة.
مع التحريك باستمرار ، اتركي السكر يتكرمل قليلاً.
يجب أن تتبخر كل مياه البصل ويجب أن تعود الدهون ليقلي البصل ويكرمله.
إنه جاهز عندما لا يتبقى سائل على الإطلاق باستثناء الدهون الجيدة! ثم عليك أن تتكيف مع ذوقك الخاص! أحببته عندما كان البصل مكرمل جيدًا وأصبح البصل شفافًا بالدهن !!
ثم سنرى الكسكس الذي سنرافقه مع هذه الطافية المذهلة !! بفضل ميريام وتوريا !!
