“شيا لونغ باو” عبارة عن زلابية صغيرة على البخار مع حشوة لحم الخنزير كثير العصير وهو نفس كعكة شنغهاي .
وصفة “شياو لونج باو” (لعدد 36 زلابية):
للحشوة:
-30 جرام ماء -300 جرام من لحم الخنزير المفروم
– 5 جرام ملح
-6 جرام سكر
-3 جرام فلفل
– ملعقة كبيرة من النبيذ الصيني
– ملعقتان كبيرتان من صلصة الصويا الداكنة – 15 جرام بصل صيني قطع صغيرة – 15 جرام زنجبيل مفروم ناعماً – ملعقتان كبيرتان من زيت السمسم المحمص -180 جرام من الهلام مأخوذ ومقطع (انظر أعلى صفحة هذاالرابط)
لتحضير العجينة: -240 جرام طحين – 135 مل ماء
ابدأ بوضع اللحم مع 30 جم من الماء حتى يمتصه اللحم تمامًا. ثم تحضير الحشوة بخلط جميع المكونات جيداً.
على سطح العمل ، ضع الدقيق وحفر بئرًا واسكب الماء.
ابدأ في عجن العجينة براحة يدك ، وقم بطي العجين وطيّه لمدة خمس دقائق.
بعد 5 دقائق ، استخدمي الأسطوانة لمواصلة عمل العجينة ، ووزعيها بالطول. اطوِ هذا الشريط إلى ثلاثة أقسام ، اقلبه بزاوية 90 درجة ثم افرده مرة أخرى على شكل شريط. استمر في هذه العملية نفسها لمدة 5 دقائق أخرى.
نقسم إلى ثلاث نقانق ، ثم كل نقانق إلى اثنتي عشرة قطعة متساوية معجون.
افرد كل قطعة من العجين براحة يدك ثم بشوبك.
ضعي ملعقة من العجين في كل قرص على هذا النحو ، ثم أغلق كل ريافولي. أنا أعتقد أن الصورة ربما تكون أقل إيلامًا من شرح مطول حول الطي.
ضعي الريافوليس في سلة من الخيزران ثم اتركيه على البخار لمدة 10 دقائق.
يتم تقديم “شيا لونج باو” مع صلصة (نصف خل بلسمي ، نصف صلصة صويا ، مع القليل من زيت السمسم وتاباسكو) وخاصة مع عيدان تناول الطعام وملعقة لتجميع العصير بداخلها!
