لذلك هناك بالتأكيد عنصر غير عادي في هذا الحساء اللذيذ! هذا هو بورسين. كانت أمي هي التي خطرت لي فكرة إضافة هذا الجبن بالثوم والأعشاب بدلاً من الكريمة! لا تشعرين به على الفور وهو بالفعل يحل محل الكريم … يمكنك المحاولة وعينيك مغلقة!
وصفة “حساء الكوسة البارد”:
-3 كوسة متوسطة -3 بصل أبيض – 3 ملاعق كبيرة زيت زيتون – 500 جرام من الماء (أكثر بقليل إذا كانت الكوسة ضخمة!) -1 مكعب مخزون – 100 جرام من “بورسين الثوم والأعشاب الدقيقة” -ملح ، فلفل ، تاباسكو -كزبرة طازجة – الصنوبر
للوصفات الجديدة الواردة في كتابي الأول ، إنه هنا:
ابدأ بغسل وتنظيف ثلاث بصل أبيض.
قطع الجذع حوالي 5 إلى 6 سم من البصيلة. قطعها إلى قطع صغيرة.
سخني زيت الزيتون في مقلاة واقلي البصل.
اغسل وقص أطراف الكوسة. قطعها إلى شرائح 1.5 سم. يجب أن تحافظ بالفعل على سمك جيد حتى لا تفرط في طهيها.
نضيف الكوسا إلى المقلاة ونقليها لتلوينها قليلاً.
إضافة الماء…
مكعب مرقة ، ملح وفلفل.
أغلق الغطاء واتركه حتى يغلي واتركه يطهى لمدة 10 إلى 12 دقيقة.
امزج كل شيء باستخدام خلاط الغمر.
أضف 100 جرام من البورسين. أضع 150 جرامًا كاملاً ولكن أعتقد أن بعض الأشخاص قد لا يحبونه. يجب أن تعلم أن البورسين ستشتم رائحته في الحساء الساخن. ولكن بمجرد أن تبرد ، لن تصل أي رائحة إلى أنفنا (!) ولكن الطعم سيكون حاضرًا ولذيذًا!
تخلط مرة أخرى مع البورسين.
أضف تاباسكو. بضع قطرات كافية!
ثم اترك الحساء يبرد حتى يصل إلى درجة حرارة الغرفة ، ثم ضعه في الثلاجة لمدة ساعتين على الأقل.
قبل التقديم مباشرة ، نخب الصنوبر في مقلاة ساخنة للغاية ، مع الحرص على عدم حرقها!
اغسلي أوراق الكزبرة وقطعيها إلى شرائح.
قدمي الشوربة باردة جدًا مع القليل من زيت الزيتون وبعض حبات الصنوبر المشوي وشرائح من أوراق الكزبرة. قدميها على الفور!
