لقد انتهيت للتو من كتابة كتابي الرابع (الذي سيصدر في أكتوبر 2017) ، وبقدر ما يبدو من الفضول ، فإن استجمامي هو وصفة للمدونة! كثير منكم في إجازة وفكرت فيكم بهذه الوصفة الأصلية للسلطة الباردة من المعكرونة الآسيوية مع الخضار التي سيكون لها مكانها في نزهة أو في وجبة ملونة وصيفية. أضع فيه الخضار النيئة: الجزر والفلفل وبراعم الفاصوليا والطماطم والخضروات سريعة الطهي ، مثل الفاصوليا والفول. مع صلصة لذيذة من زيت الزيتون وكريمة السمسم ، متبلة بلمسة من العسل والخل البلسمي ، ستسعدك هذه المعكرونة الطازجة!

تكفي 6 أشخاص:
400 جرام معكرونة صينية مطبوخة ومصفاة
1/2 فلفل أحمر
1/2 فلفل أصفر
1 طماطم كبيرة
250 غ من براعم الفاصوليا (تسمى براعم الفاصوليا)
1 حفنة صغيرة من الثوم المعمر
باقة صغيرة من الكزبرة
2 ملاعق كبيرة بصل مقلي
2 جزر
125 جرام فاصوليا مسطحة
2 ملاعق كبيرة زيت زيتون
250 جرام ادامامي أو بازلاء
لتحضير الصلصة:
1 ملعقة صغيرة عسل
1 ملعقة كبيرة خل بلسمي
4 ملاعق كبيرة زيت زيتون
1 ملعقة صغيرة زيت سمسم محمص
2 ملاعق كبيرة كريمة سمسم
1 فص ثوم
ملح فلفل
قم بطهي المعكرونة الصينية كما هو موضح على العبوة وقم بتبريدها في الماء البارد. صفيها جيدًا ثم ضعيها في وعاء كبير.
في هذه الوصفة أريد اللون !!
ستحتاج فقط إلى نصف حبة فلفل أصفر ونصف حبة فلفل أحمر. يمكنك فقط وضع واحد أو آخر. افرغهم من الماء وقطّعهم إلى شرائح رفيعة جدًا.
قفز في المعكرونة الباردة.
نقطع الطماطم إلى قطع. هنا أخذت طماطم خضراء كبيرة وناضجة جدًا.
ضعيها في المعكرونة مع براعم الفاصوليا.
فرم الثوم المعمر ناعما.
نسكب البصل المقلي.
قطعي الفاصوليا إلى نصفين. فقط هم و edamame سيطبخون.
نضعهم في مقلاة مع ملعقتين كبيرتين من زيت الزيتون ونقلبهم على نار عالية لمدة 5 دقائق.
اطبخي إدامامي (أو البازلاء ، بازلاء حديقة بيكارد رائعة!) لمدة 9 دقائق في ماء مغلي مملح.
اشطفها بالماء البارد لمنعها من الطهي وتبريدها تمامًا. صفيها جيدًا ثم ضعيها في السلطة مع الفاصوليا المطبوخة.
قشر الجزر.
وابشرهم. لديّ إناء سحري يسمح لي بالاستغناء عن روبوت لهذه الخطوة!
نقطع الكزبرة جيدًا ونصب كل شيء في الحاوية.
في وعاء صغير ، ضعي العسل والخل البلسمي وفص ثوم مقشر ومفروم (لدي معصرة الثوم لذلك!) وزيت الزيتون وزيت السمسم المحمص.
يضاف الملح والفلفل بسخاء ثم تضاف كريمة السمسم (الطحينة).
تخلط جيدا ، الصلصة جاهزة!
تصب في المعكرونة وتخلط جيدا لتفريق كل العناصر.
برد لمدة ساعتين على الأقل قبل تقديمه باردًا جدًا على طاولة صيفية جميلة!
