إذا كنت قد اتبعت “رحلة الطهي: ساو باولو” ، فقد اكتشفت “كوكسينهاس” الصغيرة ، الترجمة الحرفية لـ “أفخاذ صغيرة”. يُنطق هذا الاسم بـ “cochiniasse” ويمكن العثور عليه بسهولة للبيع في المطاعم أو للوجبات السريعة في الشوارع في البرازيل. إنها تمتلئ بشكل لذيذ ولكن في كل مرة أذهب إلى هناك ، أطلب “كوكسينهاس” الدجاج!
وصفة لـ 24 دجاجة صغيرة “كوكسينها”:
اتصال مزعج:
– 3 صدور دجاج كبيرة
-1 لتر ماء
-1 بصلة
– حفنة صغيرة جدا من البقدونس
-1 اندفاعة من الكاتشب (بشكل أساسي للون)
-ملح فلفل
عجين:
-460 جرام طحين
– 50 جرام زبدة
-4 مكعبات صغيرة من مرق الدجاج (كنور)
– 750 مل من ماء طبخ الدجاج
ابدأ بتقطيع صدور الدجاج إلى قطع.
ضعي لترًا واحدًا من الماء ليغلي. تضاف قطع الدجاج وتطهى لمدة 15 دقيقة.
استنزاف ولكن قبل كل شيء ، احتفظ بعصائر الطهي !!!!
عندما يبرد الدجاج ، افرمه. هذه العملية هي الأطول ولكن بدون صعوبة!
في مقلاة ، ضعي القليل من الزيت واقلي بصلة مقطعة إلى قطع صغيرة على نار خفيفة.
عندما يصبح البصل نصف شفاف ، أضيفي الدجاج كله.
اخلطي جيداً واطبخي لمدة 5 دقائق. يضاف البقدونس المفروم.
أضف اندفاعة من صلصة الكاتشب (خاصة للتلوين وفي البرازيل غالبًا ما يضعون اللون الأحمر ولكن أيضًا الكاتشب!).
اخلطي جيداً وأطفئي النار ، إنها جاهزة!
أضف 750 مل من ماء طهي الدجاج والزبدة و 2 سبيكة مرق دجاج (كنور في حالتي التي تحتوي على 2 مكعبات صغيرة ، 4 في الصورة!)
عندما يغلي الماء ، أضف الدقيق دفعة واحدة.
إخلطه جيدا بمعلقة خشبيه. سرعان ما يصبح من الصعب الخلط ، يتطلب الأمر الكثير من دهن الكوع!
تخلط جيداً على نار خفيفة حتى تخرج العجينة من قاع المقلاة ، مثل عجينة الشو! اتركي الطهي لمدة دقيقة أو دقيقتين إضافيتين.
تُسكب كرة العجين في وعاء وتُغطّى فورًا بغلاف بلاستيكي لمنعها من الجفاف.
كن حذرا ، الجو حار! لذا انتظر قليلاً لتتناول العجينة! لكن لا تنتظر حتى تبرد تمامًا …
خذ كرة من العجين تدحرجها بين يديك بحجم كرة بينج بونج.
ضع إبهامك في منتصف العجين.
ابدأ بقرص حافة العجين ، وتقلب باستمرار ، كما في الفخار. املئي التجويف بملعقة أو اثنتين من حشوة الدجاج.
لا تزال تقلب الكوكسينا على نفسها ، أغلقها عن طريق سحب العجين لأعلى.
بإعطائها شكل كمثرى.
أغلق الجزء العلوي وأعد صياغة كل شيء لتوحيد صورته الظلية. افعل الشيء نفسه مع باقي العجين والحشو.
تحضير وعاء من الحليب ووعاء من فتات الخبز. اغمس الكوكسين في الحليب …
ثم لفهم في فتات الخبز.
أوشكت على الإنتهاء!
حضري مقلاة من الزيت ، ضعيها على نار ساخنة ، عندما يصبح الزيت جاهزًا ، اقلي الكوكسيناس.
لقد قمت بطهيها لمدة 5 دقائق ، لكن يجب أن تكون ذهبية اللون.
سمح لي حجم المقلاة الخاصة بي بقليها في خمسات.
ليتم الاستمتاع بها ساخنة. يمكنك أيضًا تجميدها قبل قليها. لإعادة تسخينها: في الفرن أو القلي أفضل!
