أعود مرة أخرى من المغرب حيث أحضر الوصفات في كل مرة. أشكر Touria و Kenza على مشاركة وصفة التكتوكة الخاصة بهم معنا جميعًا. هو مكتوب بعدة طرق: تشاكشوكة ، تتزوكة ، تشكتشوكة … وأحيانًا يتغير الاسم أيضًا كما هو الحال في الجزائر حيث يطلق عليه اسم فلفلة. كل هذا يشير إلى نفس الطبق المثالي حقًا: الفلفل المشوي في الطماطم المطبوخة لفترة طويلة ، والتي تعطي فجأة انطباعًا بأنها حلوة (على الرغم من عدم وجود سكر أو عسل). يمكنك تذوق التكتوكة دافئة أو باردة. طريقة جيدة لجعل الأسرة بأكملها تلتهم الخضار …!
وصفة التكتوكة:
– فلفل أحمر وأخضر صغير أو عادي (إجمالي 300 جم) -5 طماطم (600 إلى 650 جرام إجمالاً) -2 فصوص من الثوم -4 ملاعق كبيرة زيت زيتون – رشة فلفل إسبليت (أو فلفل حار) -1 ملعقة صغيرة من مسحوق الفلفل الحلو -1/4 ملعقة صغيرة فلفل أبيض مطحون -1/2 ملعقة صغيرة كمون مطحون – حفنة صغيرة من البقدونس ذي الأوراق المسطحة
إذا كان لديك غاز ، فمن الأفضل أن يأخذ طعمًا مدخنًا لا يضاهى. يمكنك أيضًا وضع الفلفل على القليل من غاز التخييم. والحل الأخير: الفرن بالشواية. على الغاز ، سيكون من الضروري وضع شبكة لتتمكن من وضع الفلفل.
اقلبها بانتظام لتحمر السطح بالكامل.
يجب أن يكون مظهر الفلفل محترقًا.

قم بإزالة الذيل والبذور من الداخل.
تحرق الطماطم لمدة 30 ثانية.
ثم قشرهم.
قم بإزالة اللب الداخلي من الطماطم (بملعقة أو بسكين صغير).
نقطع الطماطم إلى قطع ونضعها في المقلاة بدون زيت! من خلال حذف الزيت في البداية ، نسمح للطماطم يجف في الحقيقة.
أضف الثوم المهروس أو المفروم.
ستطلق الطماطم عصيرها.
يجب إعطاؤهم الوقت لإطلاق الماء ، الذي يجب أن يتبخر إلى حد كبير. أضف الفلفل الحلو.
نقطع الفلفل إلى قطع صغيرة. لا يهم الحجم حقًا!
أضيفيها إلى الطماطم ثم أضيفي زيت الزيتون أيضًا.
نضيف البهارات: الفلفل الأبيض والكمون والفلفل الحار والملح.
