هذه الفطائر الصغيرة لذيذة حقًا! عجينة مقرمشة رفيعة مع كريمة غاناش و أقراص سكرية شوكولاتة للغاية ، عجائب نقية! نسختي سهلة الصنع وأعطيك هنا تقنية “كيس الطحين” التي تعتبر مثالية لصنع قاعدة معجنات حلوة!
وصفة “تارت الشوكولاتة” لـ 6 أشخاص:
عجينة حلوة:
-210 جرام طحين
– 125 جرام زبدة غير مملحة مقطعة
– 25 غ من مسحوق اللوز
– 50 جرام بيض مخفوق
-1 رشة ملح
– 35 جرام سكر بودرة
كريم الشوكولاته:
-260 جرام شوكولاته داكنة 65٪ (منجاري من فالرونا)
-100 جرام من شوكولاتة الحليب (أستخدم الزيزفون الكلاسيكي لهذه الوصفة لمكوناته بالكراميل!)
-210 جم من الكريمة السائلة الكاملة
تحضير المعجنات الحلوة:
نضع اللوز المطحون والسكر البودرة والدقيق والملح والزبدة في قطع في وعاء العجن.
صنفرة الخليط لدمج الزبدة بحرف “k” الخاص بالروبوت. أو باليد!
أضف البيض المخفوق مقدمًا واخلطه فقط لمزجها ، ولكن ليس أكثر!
نضع كرة من العجين على ورق زبدة ونضع عليها ورقة ثانية. ينتشر بالأسطوانة بدون إضافة الدقيق ، كل شيء يبقى نظيفًا !!
افردي العجينة برفق ونسقيها بثمانية دوائر دائرية سم مع الحرص على تسطيح العجينة في قاع الدائرة. يجب أن تكون الزاوية الصحيحة مثالية!
قطع العجين الزائد عن طريق تمرير سكين حول الدائرة!
افعل نفس الشيء لجميع الدوائر! اثقب قاع العجين بالشوكة في كل الدوائر. ثم ضع ورقة من ورق السيلوفان ( طبخ خاص بالميكروويف! يذوب الآخرون! ) على قاعدة معجنات.
اتركيها لترتاح على ورقة خبز مبطنة بورق برشمان في الثلاجة لمدة ساعة.
يُسخن الفرن على حرارة 180 درجة مئوية.
اخبزيها لمدة 15 دقيقة عند 180 درجة مئوية مع كيس الدقيق ، ثم بعد فترة ، أخرجي الكيس ببساطة عن طريق سحبه لأعلى. قم بإزالة جميع الأكياس بهذه الطريقة.
قم بإزالة قواعد المعجنات بعناية أيضًا. ضع العجينة في الفرن مرة أخرى لمدة 15-20 دقيقة ، شاهدها.
ثم نحصل على قواعد عجين جاهزة ليتم حشوها بكريمة الشوكولاتة اللذيذة!
إذا قمنا بالعمل بشكل جيد ، يمكننا أن نرى الزاوية الصحيحة!
ثم تحضير كريمة الشوكولاتة. ضعي جميع المكونات في وعاء وسخنيها إما في الميكروويف بزيادات لمدة دقيقة واحدة أو في حمام ماري.
نظرًا لوجود كريمة سائلة ، فلا يوجد خطر من احتراق الشوكولاتة في الميكروويف. خلط جيد.
نحصل على كريم ناعم ولامع!
املأ قاعدة العجين بكريمة الشوكولاتة.
يحتوي الكريم على فقاعات في هذه المرحلة ، يمكنك توزيع الكريم عن طريق هز التارتليت والنقر عليها بعناية !!
برد في الثلاجة لمدة ساعتين على الأقل قبل الأكل!
