بطاطس مقلية مصنوعة من الحلومي، وهي جبنة قبرصية تُطهى جيداً وتحتفظ بقوامها. هذه البطاطس المقلية رائعة ومقرمشة وخفيفة من الداخل! يُقدم مع صلصة الطحينة (معجون السمسم) وعروق الرمان، فهو طبق أصيل.
تكفي 2-3 أشخاص:
250 جم حلومي
1 بيضة
60 غ من السميد الناعم
زيت القلي
1 حبة رمان
عدد قليل من أوراق الكزبرة
ملح أو فلفل أو فلفل أو مسحوق الفلفل الحار أو الفلفل الحلو
لتحضير الصلصة:
30 جرام طحينة
30 جم ماء
15 جرام زيت زيتون
35 جرام كريمة كاملة
ملح فلفل
إليك الحلومي الذي ستجده في محلات البقالة الشرقية أو اليونانية أو القبرصية وغيرها.
قطعيها إلى شرائح وقطعي الشرائح إلى نصفين.
يمكنك أيضًا تقطيع الرقائق إلى نصفين لصنع رقائق أصغر حجمًا، فالأمر متروك لك. اكسري بيضة في وعاء ثم أضيفي الحلقوم واخلطيها جيداً لتغطي القطع.
يوضع السميد الناعم في وعاء آخر، ثم توضع الرقائق واحدة تلو الأخرى مع رجها جيداً لتغطيتها بالسميد.
تُسخّن مقلاة صغيرة من الزيت إلى 180 درجة مئوية. توضع البطاطس في المقلاة وتُقلى حتى يصبح لونها جميلاً.
توضع على ورق ماص.
يُعد تحضير الرمان أمراً بسيطاً: ما عليك سوى تقطيعه إلى نصفين.
اكسري كل نصف إلى أرباع باليد وضعي ربعاً واحداً ووجهه لأسفل في راحة يدك. اضغطي على ظهر ثمرة الرمان بقوة بملعقة مسطحة وستخرج الحبيبات (كما تسمى) بسهولة.
لتحضير الصلصة، اخلطي الطحينة مع الماء. في البداية، يأخذ التيهينا قواماً محبباً. اسكب الماء قليلاً في الماء في كل مرة مع التحريك، وستتشكل الصلصة وتصبح كريمية.
تُسكب فوق الكريمة وزيت الزيتون.
ضع الملح والفلفل حسب ذوقك. يتم الانتهاء من الصلصة.
تُقدم الرقائق ساخنة مع الصلصة والقليل من أوراق الكزبرة وعروق الرمان. يُتبّل بالملح والفلفل ويُرشّ القليل من الفلفل الحلو أو الفلفل الحار.
Frites de Halloumi

Des frites de halloumi, ce fromage chypriote qui tient parfaitement à la cuisson et garde sa texture. Ces frites sont très étonnantes, croustillantes et légères à l'intérieur ! Servez avec une sauce au tahiné (la pâte de sésame) et des arilles de grenade, c'est un petit délice bien original.
Coupez le halloumi en tranches, et coupez les tranches en deux.
On peut encore recouper les frites en deux pour en avoir de plus petites, c’est à vous de voir. Cassez un œuf dans un récipient, puis mettez le halloumi et mélangez bien pour bien recouvrir les morceaux.
Mettez la semoule fine dans un autre récipient, puis placez les frites une à une en secouant bien pour les recouvrir de semoule.
Faites chauffer une petite casserole d’huile à 180°C. Placez les frites et faites frire jusqu’à obtenir une belle coloration. Placez sur un papier absorbant.
Pour préparer la grenade, c’est assez simple : il suffit de la couper en deux.
À la main, cassez chaque moitié en quartier et placez un quartier vers le bas dans la paume de votre main. Tapez avec une cuillère plate sur le dos de la grenade assez fortement, les arilles (c’est leur nom) vont sortir sans difficulté.
Pour la sauce, mélangez le tahiné et l’eau. Au départ, le tahiné prend une texture grainée. Il faut verser l’eau petit à petit tout en mélangeant et la sauce va se former et devenir onctueuse. Versez la crème et l’huile d’olive.
Salez et poivrez à votre goût. La sauce est terminée.
Servez les frites bien chaudes avec la sauce, quelques feuilles de coriandre, les arilles de grenade. Salez et poivrez, et parsemez d’un peu de paprika ou de piment.
