Chinese Stir-fried Noodles with Vegetables and Duck

Here is a really delicious recipe for Asian fried noodles. It will be necessary to prepare in advance the duck with the sauce char siu. If you make arrangements the day before, the meal will be prepared in a very short time on the same day, as the noodles are stir-fried in a wok very quickly. I have lots of variations of stir-fried noodles, but I have to start somewhere! These are really succulent and have a taste authentic that I eat in China. 

Prepare beforehand, two duck breasts with sauce char siu. Then simply cook it in small pieces with the sauce until it is cooked. This is quite fast in the oven!

Cook the chosen noodles (usually 4 minutes) with one minute less, as they will recook in the sauce!

Cut the ginger into slices (you can leave the skin on, I often do!) and then into small cubes. Do the same with the garlic.

Prepare the   Chinese onion by removing the small root and cutting into 3-4cm long pieces.

Heat the oil (over high heat) in a wok, add the spring onion, garlic and ginger in small pieces and the carrot in sticks. 

Cook for 3 minutes on very high heat, then add the duck cut into small slices. 

Mix well. 

Add the bean sprouts. 

Oyster sauce, sugar and soy sauce. 

Add pre-cooked and drained noodles. 

Mix well and let cook for 3-4 minutes in the sauce, which will be quickly absorbed by the noodles.

Serve immediately hot!
