Ingredients

90 g blanc d'œuf
375 g poudre d'amande
165 g sucre
1 bonne pincée sel
1 c. à café arôme amande amère

Instructions

Pesez les 90g de blanc d’œuf puis montez-les en neige ferme.
Mélangez la poudre d’amande et le sucre.
Versez un bon tiers de ce mélange dans le blanc d’œuf et mélangez avec une spatule. Ajoutez ensuite le reste du mélange en soulevant la masse comme pour une mousse au chocolat.
Ajoutez à mi-parcours le sel et l’arôme amande amère. La pâte à l’arrivée est assez ferme.
Pesez des boulettes de 20g.
Mettez du sucre dans un bol et du sucre glace dans un autre bol. Passez les boulettes, d’abord dans le sucre, puis dans le sucre glace.
Aplatissez les boulettes entre les paumes des mains et placez-les sur une plaque à pâtisserie garnie de papier sulfurisé.
Faites cuire 25 minutes à 165°C sur chaleur statique (pas de chaleur tournante).
Laissez refroidir avant de déguster.

A simple, unpretentious recipe, in preparation for another recipe in which I’ll use these macaroons as a base. I’ve already suggested amaretti (recipe HERE), but these are different in texture and appearance. A little treat for everyone.

For about thirty macaroons :

90g egg white (break up 3 whites and beat with a fork, then weigh out the quantity required)
375g almond powder
160g of sugar
1 good pinch of salt
1 teaspoon of bitter almond flavor

Weigh the 90g egg white and beat until stiff.

Mix the almond powder and sugar.

Pour a good third of this mixture into the egg white and mix with a spatula. Then add the rest of the mixture, lifting the mass like a chocolate mousse.

Add the salt and bitter almond flavoring halfway through. The dough was quite firm on arrival.

Weigh out 20g dumplings.

Put sugar in one bowl and powdered sugar in another. Dip the balls first in the sugar, then in the powdered sugar.

Flatten the dumplings between your palms and place them on a parchment-lined baking sheet.

Bake for 25 minutes at 165°C over static heat (no fan assisted heat).

Leave to cool before serving.
