لقد كتبت عن وصفة بسطيلا الدجاج (الوصفة هنا ): المزيد من الوصفات المغربية لفترة من الوقت! لكن في غضون ذلك ، عدت إلى الرباط لبضعة أيام مع أصدقائي. ثم كارثة! لقد أمضينا أيامنا في الطهي: التارتليت ، والمعكرون ، والنوغاتين ، وحتى تجارب ميل فيويل (وصفة سأضعها على المدونة هذا العام!) ، أكوام من المعكرونة عجين الفطير (ليس سهلا مع الحر لكننا قبلنا التحدي!) وبالطبع وصفات مغربية! وللا ميريام طبخنا طاجن من لحم الضأن مع البرقوق الرائع في الإحساس والبساطة! هرعت للقيام بذلك مرة أخرى في المنزل لتصوير الوصفة في الطاجين التقليديين. سترى أن سر الطاجين هو صلصة الكريمة! انه جيد جدا! خصوصا من تذوق الصلصة عن طريق غمس الخبز فيها قبل البدء باللحم والخوخ …
وصفة طاجين البرقوق لأربعة أشخاص:
– 1 كتف من لحم الضأن مقطعة إلى قطع
– 1 بصل مقطع
-1 ملعقة صغيرة من مسحوق الزنجبيل
-1/2 ملعقة صغيرة فلفل أبيض مطحون
-1/4 ملعقة صغيرة من الكركم
– 3 أعواد قرفة
-1/4 ملعقة صغيرة ملح
– مكعب واحد من الزعفران (في محلات البقالة في شمال إفريقيا أو اختياريًا دائمًا ، يمكن استبداله ببضعة مدقات من الزعفران)
– 50 جرام زبدة
– 50 جرام زيت
– 300 جرام من البرقوق (منزوع النوى أم لا)
– 50 جرام سكر
ضعي اللحم في طنجرة ضغط (أو قدر كبير أو طاجين على الموقد!).
نضيف البهارات: مسحوق الزنجبيل والفلفل …
الكركم والزعفران مكعب (أو عدد قليل من المدقات الحقيقية)
يضاف الزيت والزبدة والقرفة والملح.
يحرق اللحم جيدًا على نار عالية نسبيًا في البداية.
نضيف البصل المقطّع إلى قطع صغيرة والقليل من الماء رئيس الطبخ (50 جرام).
ثم اطبخي لمدة ساعة جيدة (انظر 1:30) في قدر الضغط. إذا لم يكن لديك طبق خزفي ، فسيتعين عليك إغلاق غطاء الطبق المستخدم وإطالة فترة الطهي (ثلاث ساعات أو أكثر!). يجب أن يأتي اللحم من العظم! من الضروري المراقبة من وقت لآخر وإضافة القليل من الماء إذا لزم الأمر.
خذي القليل من عصير الطهي وضعيه في أ حرمان مع الخوخ. لذلك سوف يطبخون بشكل منفصل لتجنب هرسهم في الطاجين!
أضف 50 جرام من السكر إلى البرقوق.
استمر في الطهي بدون غطاء (بدون غطاء) لتقليل عصائر الطهي. يجب أن تكون الصلصة “مغطاة” ودسمة ، وهذا هو السر الكامل لطاجين ناجح تمامًا!
افعل نفس الشيء مع عصير البرقوق. تصبح الصلصة كريمية للغاية. إذا لم يكن الأمر كذلك وكان القراصيا يهدد بالهرس ، فما عليك سوى إعادة العصير من البرقوق (بدون البرقوق) إلى القدر وتقليله مرة أخرى في هذا القدر.
بمجرد أن ينضج كل شيء جيدًا وتصبح الصلصة ناعمة ، اسكب اللحم وعصيرها في طبق (طاجين !!) واسكب البرقوق في العصير! كل شيء إلهي حقًا! يمكنك بالتأكيد إضافة اللوز المقلي أو المقلي أو المحمص والمطحون ، ولكن في النهاية ، لمنعهم من يلين!
