وصفة “سوبايبيلاس”:
Sopaipillas:
– 500 جرام من اليقطين (وزن مقشر)
– 500 جرام طحين
-3 ملاعق كبيرة زيت
-1/2 ملعقة صغيرة ملح
-1 ملعقة صغيرة سكر
-1 ملعقة صغيرة من البيكينغ باودر
سلطة جانبية:
– 500 جرام طماطم
– 300 جرام بصل
– باقة كزبرة
-3 ملاعق كبيرة زيت (وليس زيتون!)
-1 ملعقة كبيرة خل أبيض
– الفلفل الحار أو تاباسكو
-ملح
– زيت القلي
ابدأ بتحضير السلطة الجانبية ، في حال اخترت أن تأكل السوبايبيلا في “النسخة المالحة”.
قطعي الطماطم إلى مكعبات صغيرة.
نقطع البصل بنفس الطريقة. نقطع حفنة الكزبرة.
ضع كل شيء في وعاء. أضف الخل والزيت.
يضاف الملح ثم الفلفل المفروم أو التاباسكو.
ضع السلطة جانبًا.
تحضير اليقطين.
قم بإزالة القشرة ثم قطع اليقطين إلى قطع. وزن اليقطين بدون الجلد!
توضع في الفرن على حرارة 190 درجة مئوية لمدة ساعة جيدة ، وهو الوقت المناسب لطهي اليقطين جيداً.
يجب أن يخرج أكثر جفافا. إذا كان بالكراميل ، فهو أفضل !!
نضع اليقطين المطبوخ في الخلاط ويهرس.
ضعي الهريس في وعاء. أضف الزيت.
أضف الملح والسكر والبيكنج باودر.
نخلط ثم نضيف الدقيق. عليك أن تضيفه تدريجياً حتى لا تلتصق العجينة بأصابعك.
فقط نوعية اليقطين سوف يحدد كمية الدقيق المراد استخدامها.
دع العجينة ترتاح في الثلاجة لمدة ساعة في غلاف بلاستيكي.
أخرجي العجين بعد هذا الوقت ، ثم افرديها على سطح عمل مطحون.
قطع الأشكال. Sopaipillas بشكل عام مستدير ومخدد في بعض الأحيان. هذا هو السبب في أنني أستخدم قالب الكانيل كقاطع ملفات تعريف الارتباط.
اصنع ثقبًا بشفرة السكين في المنتصف للالتزام بالتقاليد! خلاف ذلك ، يمكننا أن ننسى هذه الخطوة!
تحضير مقلاة مليئة بالزيت جاهزة للقلي. تقلى سوبايبيلاس. يتم طهيها عندما ترتفع إلى السطح!
