كنت قد عبرت بالفعل مسارات مع المحجبات والماريك عدة مرات في حياتي قبل أن أراهم يطبخون أمام عيني في Délice de la Casbah في يناير 2011 ، أثناء تدريبي في المعجنات الجزائرية (من أجل المتعة فقط لأنها ليست كذلك. عملي). إنه نوع من عجين الفطير مع سميد القمح القاسي. دون أن يملأها “الماريك” ومعها “المحجبون”. في معظم الأحيان ، يغطى المحجب بالطماطم والبصل المطبوخ في زيت الزيتون ، ولكن يمكن أن يكون حلوًا أيضًا. أقدم لكم هنا التقنية الأساسية مع الحشوة الشهيرة للمهاجب. أجد متعة كبيرة في تحضير المحجبات والماريك ، لأنها سريعة وبسيطة وتقليدية ولذيذة …
وصفة محجبس:
– 500 جرام من سميد القمح القاسي الناعم (هذا ليس سميد الكسكس) -3-4 ملاعق كبيرة زيت -2 ملاعق صغيرة من الملح -ماء بارد – زيت للنشر
مقبلات المحجبين – 3 ملاعق كبيرة زيت زيتون -7 طماطم -4 بصل -1 فلفل حلو (أحمر أو أخضر) -4 فص ثوم -1 ملعقة كبيرة من هريس الطماطم -1/2 ملعقة صغيرة من الهريسة -ملح فلفل
اجمع المكونات في حالة المحجب (بالزينة). إذا قمنا بعمل العرائس ، فيمكننا تخطي هذه الخطوة.
اغمر الطماطم في الماء المغلي لمدة 20 ثانية.
بهذه الطريقة يمكنك تقشير الطماطم بسهولة بالغة!
قشرهم وأزل القاعدة حيث يوجد الساق.
نضع زيت الزيتون في مقلاة عالية ونضيف الطماطم.
نضيف البصل المقشر والمقطع (ناعم أكثر أو أقل).
نتركه يطهى على نار معتدلة ويضاف الهريسة (الجرعة تعتمد على الذوق الفردي!).
أضف الثوم المهروس.
وكذلك معجون الطماطم والفلفل (بدون بذور) مقطعة إلى قطع صغيرة.
اتركيه للطهي لمدة ساعة جيدة ، مع إضافة القليل من الماء إذا لزم الأمر (والذي سوف يتبخر ولكنه سيسمح بالطهي).
اترك حشوة المحجب لتبرد. تحضير عجينة المعارك / المحجب: نضع سميد القمح الناعم الناعم في وعاء كبير (أو وعاء محضر الطعام …).
أضف الملح والزيت.
أضف الماء أثناء الخلط بخطاف روبوت كينوود أو كيتشينيد.
أضف قدر من الماء ضروري كعجينة الخبز. على أي حال ، إذا لم يكن هناك ما يكفي من الماء ، فإن العجين سيكون شديد المقاومة وإذا كان هناك الكثير ، فإن العجين يكون لزجًا جدًا. لذلك يكفي التعديل بالماء أو السميد الناعم.
يجب أن تصبح العجينة طرية وليست لزجة. يجب أن تعمل بإنسان آلي أو باليد على سطح نظيف. اعجن العجينة لمدة 10 دقائق على الأقل.
يجب أن تكون العجينة ناعمة الملمس. دع العجين يرتاح لمدة 10-15 دقيقة (أو وقت تحضير الحشوة). تقطع إلى 10 كرات صغيرة متساوية الحجم.
نضع بعض الزيت على سطح العمل ونضع كرة عجين فيه.
انتشار الكرة في الزيت وافردها بيديك. الكرة مرنة للغاية ، خاصة في الزيت. لذلك من السهل جدًا صنع صفيحة رقيقة جدًا من العجين.
عليك فقط سحب الحواف عن طريق رفع العجين للخارج. سوف تصبح رقيقة مثل ورق السجائر.
يمكنك أن ترى بوضوح الفرق في الحجم بين الكرة الأصلية والعجين المنتشر!
اطوي العجين أكثر أو أقل في الثلث في اتجاه واحد.
ثم مرة أخرى في ثلاثة. ثم نحصل على مربع يمكن طهيه في مقلاة أو على صانع كريب احترافي (أستخدم البيليج الخاص بي ، عند 230 درجة مئوية كما هو الحال في Délice de la Casbah).
اطبخ على كلا الجانبين. يطبخ المحجب ما لا يقل عن 4-5 دقائق على كل جانب. (عليك أن تطبخ أكثر قليلاً من الصورة!).
يمكنك عمل فطيرة بسيطة عن طريق حشوها قبل الطهي (مهجب) أو عمل عجينة مزدوجة من خلال وضع محجب مطبوخ بالفعل في وسط العجينة الملفوفة قبل طيها بالكامل كما كان من قبل. يكفي أن تطبخ بشكل عادي ، لأن وسط المحجب قد طبخ للمرة الأولى. فمن ثم ماريك!
بالنسبة للمهجب ، ضعي حشوة الطماطم على ورقة العجين.
أضعاف في أربعة ويطهى كما كان من قبل.
إنه حار ولذيذ مع الزينة المتبلة للتو!
للتلخيص ، لذلك نحصل على نوع من الخبز الهش والمقرمش الذي يكون حقًا لذيذًا ساخنًا للماريك ، أو نوعًا من الخبز المحشو. يمكنك أيضًا وضع حشوة حلوة مثل العسل أو الكراميل أو حتى النوتيلا (أكلت البعض في القاهرة !!).
