وصفة “فطيرة البصل”:
معجنات
– 100 جرام زبدة
-200 جرام دقيق
– صفار بيض
– 10 جرام سكر
– قليل من الملح -ماء
جهاز البصل
-1 كيلو بصل
– 15 جرام زبدة
– 20 جرام سكر
-3 بيضات
– 200 مل كريم كامل سميك
– 100 مل حليب
ابدأ بإعداد المعجنات القصيرة. سنمضي هذه المرة عن طريق نسف العجينة بالرمل. نضع الزبدة مقطعة إلى قطع (حتى باردة) مع الملح والسكر والدقيق.
إذا كنت تستخدم روبوتًا ، فابدأ في عمل العجين باستخدام “ورقة” الروبوت ، أي “K”. وإلا اعمل باليد …
أضيفي صفار البيض واستمري في الخلط ثم أضيفي الماء ببطء حتى تحصل على عجينة ناعمة.
لف كل شيء على شكل كرة ثم ضعي العجينة على ورقة من ورق البرشمان ، ثم أضيفي ورقة ثانية في الأعلى ، ثم افرديها إلى 2 أو 3 مم.
يقشر البصل ويقطع إلى شرائح. لا يهم كم هي قصة شعرهم “جميلة”. أنا ببساطة أقطعهم إلى نصفين ثم إلى شرائح متوسطة.
في مقلاة ، سخني الزبدة على نار عالية. أضف البصل. يقلب باستمرار بملعقة خشبية. سيبدأ البصل بالكراميل. لا يزال عليك توخي الحذر حتى لا تدعهم يحترقون!
عندما يبدأ لون البصل في التلوين بشكل جيد ، أضف الماء على نار عالية! يتم طهي البصل ببساطة عن طريق إضافة الماء بانتظام وانتظار تبخره. سيتعين عليك إضافة الماء حتى تنضج ، الأمر الذي سيستغرق من 35 إلى 40 دقيقة إجمالاً. يضاف السكر في نهاية الطهي وكذلك الملح والفلفل.
تحضير الخليط الكريمي. يُمزج في وعاء مع البيض والقشدة والحليب والملح والفلفل (ربما القليل من جوزة الطيب!).
عندما ينضج البصل ، أضفه إلى خليط الكريمة.
خلط جيد.
أثناء تحضير البصل أو بعد ذلك ، قم بملء قالب أو إطار أو أي إناء آخر يمكن استخدامه كطبق فطيرة. يُسخن الفرن على حرارة 180 درجة مئوية.
سيتعين عليك طهي ستائر العجين ، أي بدون حشو ، للحصول على كل هشاشة العجين. لا تنسى وخز العجين!
نصيحة من برنارد: لطهي العجين الستارة ، أقدم هذه النصيحة. غالبًا ما كنت أستخدم ورق البرشمان مع الفاصوليا المجففة ، لكنني اكتشفت تركيبة أخرى كانت أكثر إثارة للاهتمام وبدون إتلاف العجين! فقط املأ قاعدة المعجنات تتشبث الفيلم ، ثم يملأ بالدقيق ويختم مثل الكيس. ثم تمتلئ قاعدة العجين بهذه “الطبقة”! يقاوم الفيلم القابل للتمدد الفرن ، علاوة على ذلك ، يتضخم الدقيق (حتى جاف) بالحرارة ، وبالتالي سوف يضغط العجين على حواف القالب المستخدم! الكثير من المزايا! خاصة وأننا نستطيع الاحتفاظ بهذا “الشيء” لاستخدامه لاحقًا وعدة مرات حسب الضرورة!
تُخبز العجينة بكيس الدقيق من أجل 15 دقيقة عند 180 درجة مئوية.
في نهاية اخبزيها لمدة 15 دقيقة ، أخرجي كيس الدقيق ثم ضعي العجينة الفارغة في الفرن مرة أخرى لمدة 10 دقائق.
نملأ بخليط البصل ثم نعود للفرن لمدة 30 أو 40 دقيقة … كل هذا يتوقف على قوة الفرن من كل واحد! يجب أن تكون الفطيرة ذهبية …
أخرجه من الفرن وافتح الإطار بلطف أو افصله عن القالب. هذه الفطيرة أيضًا لذيذة باردة في اليوم التالي ….
