من المستحيل تفويت هذا وصفة كما هو موجود في المعجنات والأطعمة المالحة. أبسط بكثير مما يبدو ، إنه حقًا أفضل من تلك التي تجدها في السوبر ماركت! ابدأ بتحضير درجة الحرارة. نضع الدقيق والزبدة في وعاء. أضع كل شيء في وعاء روبوت المطبخ ولكن يمكننا الاستغناء عنه تمامًا!
رمل كل شيء. وهذا يعني أنه في المطبخ أو وعاء كينوود ، عليك استخدام “k” وتخلط حتى تغطي الزبدة جزيئات الدقيق. كل شيء يشبه الرمل. إذا لم يكن لديك آلة ، فقم برمل الخليط بين راحتي يديك ، مثل التقليب الناعم.
قم بإذابة الملح في الماء.
يضاف الماء المملح دفعة واحدة ثم يخلط مع “k” أو يدوياً لمجرد تجانس كل شيء دون أن تعمل العجين لفترة أطول.
عجينة التمبرا جاهزة! تفو ، الخطوة الأولى اكتملت! تصبح العجينة طرية للغاية في هذه المرحلة ولزجة قليلاً.
ضع درجة الحرارة على فيلم قابل للتمدد في محاولة لجعله مستطيل الشكل بسماكة 2 أو 3 سم.
اترك التمبرا في الثلاجة لمدة ساعتين تقريبًا. طحين سطح العمل قليلاً (منجم صغير جدًا!). لا تضع الكثير من الدقيق في خطر تغيير نسب العجين!
افردي العجينة لتصبح أطول بثلاث مرات من عرضها.
يجب أن تكون الزبدة بنفس قوام درجة الحرارة !!
نضع الزبدة في المنتصف على شكل مربع ، وبذلك نترك ثلث نبيذ في الأعلى وثلث في الأسفل.
اطوي الثلث السفلي فوق الزبدة ثم الثلث العلوي فوق العجينة التي تغطي الزبدة. منعطف أو دور العجين عند 90 درجة. لذلك نجد أنفسنا كما في الصورة أدناه.
افردي العجينة إلى بدء ما زلت لا تضغط برفق في منتصف العجين ، وذلك لتسوية كل شيء. طحين حسب الحاجة قليلا في التمسيد العجين لتطبيق طبقة مجهرية من الدقيق …
افردي العجينة لتصبح أطول بثلاث مرات من عرضها.
أضعاف في ثلاثة كما كان من قبل وتحويل 90 درجة. هذه خدعة بسيطة. (يمكنك دحرجة العجين بحيث يكون أطول بأربع مرات من عرضه وطوي العجين لأربع مرات ، لكن لم يكن لدي مساحة. هذه الجولات في هذه الحالة عبارة عن جولات مزدوجة وتتوافق مع جولة واحدة و نصف) .
كرر هذه العملية مرتين للحصول على إجمالي 3 دورات فردية (أو إذا كانت دورات مزدوجة ، كرر مرة واحدة فقط للحصول على إجمالي 2 دورات مزدوجة) .
في هذه المرحلة ، قم بطيها لثلاثة أضعاف ولفها في فيلم مطاطي وضعها في الثلاجة لمدة ساعة أو ساعتين.
أخرجي العجين من الثلاجة وضعي 3 لفات مفردة جديدة على العجين أو دورتين مزدوجتين.
قم بطيها مرة أخيرة إلى ثلاث مرات واترك العجين يرتاح في الثلاجة حتى يتم استخدامه تحت طبقة قابلة للتمدد.
هذا كل شيئ!!
كل ما تبقى هو تقطيع العجين إلى 4 مربعات ولف هذه المربعات بشكل رقيق لاستخدامها بالشكل الذي نراه مناسبًا …
لكي ترتفع العجينة بشكل مثالي في الفرن ، من الضروري تقطيع شرائح العجين (بالشكل المطلوب) بسكين جيد وبترتيب شديد. بهذه الطريقة ، لن يكون للعجين مقاومة من الجانبين للارتفاع.
كنت معتادًا أكثر على صنع فطائر التارتين باستخدام المعجنات القصيرة ، لكنني أتدرب في المنزل ، أنا الآن متحمس جدًا … يجب أن يقال أن معجنات النفخ محلية الصنع لذيذة حقًا.
أما بالنسبة للتاتين ، فيجب عليك تقطيع العجين 1 أو 2 سم أطول من قطر القالب ثم وخز العجين قدر الإمكان لمنعه من الانتفاخ أثناء الطهي !!
