في الوقت الحالي أقدم الكثير من الأطباق المغربية! لكن هذا بالتأكيد لأنني عدت من الرباط حيث كنت أطبخ مع صديقي العزيز توريا. لذلك ، في كل مرة أذهب فيها ، أعود بحقيبة مليئة بالوصفات. وفي كل مرة أشعر بالبهجة لدرجة أنني لا أستطيع امنعني شاركها هنا. حتى اليوم طاجين. يوجد العديد من الطاجين مثل الطهاة في المغرب. في فرنسا ، غالبًا ما نأكل نفس الطاجين. بينما يمكن أن يشير الطاجين إلى مجموعة كاملة من الوصفات الرائعة. طاجين لحم العجل هذا رائع: تذوب في فمك اللحوم والخضروات ونكهات متعددة وغير متوقعة وقليل من الليمون المسكر لإبراز كل شيء! لاختبار عاجل …!

وصفة طاجين العجل مع البازلاء والخرشوف:
– 1 كجم من لحم العجل (مع بعض العظام) – 6 ملاعق زيت -2 بصل -2 فص ثوم مهروس -1 ملعقة صغيرة من مسحوق الزنجبيل -1 ملعقة صغيرة ملح -1/2 ملعقة صغيرة فلفل أسود مطحون -1/2 ملعقة صغيرة من مسحوق الكركم -1 رشة من صبغة الزعفران (اختياري أو اثنين أو ثلاث مدقات من الزعفران الحقيقي) -500 جرام بازلاء مقشرة -6 قلوب خرشوف -3- ملاعق كبيرة زيت زيتون – حفنة صغيرة من الكزبرة – حفنة صغيرة من البقدونس ذي الأوراق المسطحة -1 ليمون ملبس (بالملح)
نضع اللحم المقطع (فقط اطلب من الجزار تقطيعه إلى قطع ، خاصة للعظام) في طبق خزفي مع الزيت (وليس زيت الزيتون).
